Therefore, in this research, cacao flavored milk (chocolate milk) was treated using ultrasound at various levels of power intensity, exposure time, and treatment temperature. A light microscope equipped by high resolution digital camera was used to evaluate the size distribution of cocoa particles. Finally, the color, flow and viscosity, and sensory characteristics of stabilized samples were determined. According to the findings, increase of power intensity and exposure time led to a significant increase on the degree of homogenization, and subsequently a paramount decrease on the size of cocoa particles. The cocoa particle diameters of chocolate milk which sonicated at 65 ºC were significantly smaller than the other temperatures. Moreover, the stabilized samples showed Newtonian behavior where the viscosity of control was lower than those treated by ultrasonic. With increase of ultrasound power intensity and exposure time, the viscosity of treated samples decreased. In terms of color, the sonicated samples showed higher L* values and the increase of power intensity and exposure time led to a significant increase on L* value. These samples gained lower sensorial scores than control mostly due to their ‘rubbery’ aroma. But, overall acceptance of treated samples had no significant difference against control. The ultrasound is an effective, rapid, and novel technique which can reduce the size of cocoa particles in order to produce stabilized chocolate milk where its color, sensory and rheological properties was very similar to one treated by conventional heat treatment. These findings can open new approaches in terms of its applicability in dairy industry.}, keywords = {Chocolate milk,Cacao flavored milk,Ultrasound,Color,Sensory,Rheolo}, title_fa = {تاثیر امواج فراصوت روی اندازه ذرات، رنگ، گرانروی و ویژگی‌های حسی شیرکاکائو}, abstract_fa = {از آنجایی‌که در دهه‌های اخیر فراصوت به عنوان یک ابزار موثر در هموژنیزاسیون و کاهش اندازه ذرات مورد استفاده قرار گرفته است بنابراین، در بررسی حاضر برای نخستین‌ بار تاثیر امواج فراصوت در شدت‌ها، زمان‌ها و دماهای مختلف روی اندازه ذرات کاکائو، ویژگی‌های چشایی، رنگ و گرانروی شیر کاکائو (020/0 درصد کاپا-کاراگینان، 7 درصد شکر و 5/1 درصد وزنی/وزنی پودر کاکائو) ارزیابی شد. نتایج نشان داد که با افزایش شدت و زمان تیمار، اندازه ذرات کاکائو بیشتر کاهش یافت. اندازه ذرات کاکائو در دمای °C65 کوچک‌تر از دماهای C°25 و C°45 بود. نمونه‌های پایدار شده شیر کاکائو نیز رفتار نیوتنی داشتند. هم‌چنین نمونه شاهد، گرانروی پایین‌تری نسبت به نمونه‌های تیمار شده با امواج فراصوت داشت و با افزایش شدت و زمان اعمال امواج فراصوت، گرانروی کاهش یافت. در ضمن، شاخص *L نمونه‌های تیمار شده با امواج فراصوت بیشتر از نمونه شاهد بود و با افزایش زمان و شدت، این ضریب افزایش یافت. اگرچه فرایند فراصوت سبب کاهش میزان رسوب در شیر کاکائو ‌شد و نمونه‌های تیمار شده با امواج فراصوت از لحاظ طعم، امتیاز کم‌تری نسبت به نمونه شاهد کسب کردند؛ ولی، پذیرش کلی نمونه‌های فرایند شده تفاوت معنی‌داری با نمونه شاهد نداشت. با توجه به یافته‌های این بررسی، امواج فراصوت روشی جدید، سریع و کارا است، که قادر به تولید شیر کاکائوی پایدار با ویژگی‌های رنگ، گرانروی و حسی قابل رقابت با نمونه‌های تیمار شده با حرارت بوده و به‌این ترتیب، چشم‌انداز جدیدی در رابطه با کاربرد آن در صنایع شیر مطرح می‌گردد.}, keywords_fa = {شیر کاکائو,فراصوت,رنگ,ویژگی حسی}, url = {https://ifstrj.um.ac.ir/article_31231.html}, eprint = {https://ifstrj.um.ac.ir/article_31231_f939984261fee8be2d00315ce21fbf5e.pdf} }
