In this study, the effect of different temperature levels (150, 165 and 180°C) and frying time (1 to 8 min) on physicochemical properties of Bezhi was investigated. The obtained results showed that increasing frying time up to the first 3 minutes causes a significant increase in sample volume. Although, further increase in frying time was not accompanied by volume increase but the mean volume was decreased significantly. Generally any increase in the studied parameters (temperature and frying time) would increase the samples’ diameter while other dimensional characteristics remained unchanged. Moreover, increasing temperature and frying time would increase the samples’ hardness as well as their color changes (∆E). L* value showed decrease when increasing studied parameters. The rate of decrease in L* in the studied temperature levels (150, 165 and 180 °C) were found to be 0.00987, 0.07665 and 0.11250 S-1 respectively. In addition a* value was increased by increasing the studied parameters while b* remained unchanged. The activation energy for the enzymatic reactions in Bezhi samples was 31.12 Kcal/mole which demonstrates the high effect of temperature on these reactions in the studied temperature range. Temperature and frying time showed considerable effect on the crust formation of samples. While the maximum crust thickness at 150 °C was reached to 0.55 mm, the value of 1.45 mm was recorded as the maximum crust thickness at 165 and 180 °C. So oil temperature and frying time have an important effect on physiochemical properties of Bezhi.}, keywords = {Bezhi,Frying,Physicochemical properties,Color change,Volume}, title_fa = {بررسی تغییرات فیزیکوشیمیایی بژی (نوعی کلوچه‌ی سرخ‌شده) هنگام سرخ شدن به‌روش عمیق}, abstract_fa = {بژی نوعی کلوچه­‌ی سرخ شده­‌ی شیرین است که در مناطق غربی ایران به‌صورت سنتی تولید می­‌شود. در این تحقیق تأثیر دو عامل دما (150، 165 و C°180) و زمان سرخ‌کردن (8-1 دقیقه) بر ویژگی­‌های فیزیکوشیمیایی بژی موردبررسی قرار گرفت. طبق نتایج به‌دست آمده با افزایش زمان سرخ‌کردن تا سه دقیقه‌ی اول حجم نمونه‌­های بژی به‌طور معنی‎داری افزایش یافت (p<0.05). درادامه هرچند تغییرات حجم معنی­‌دار نبود، اما میانگین حجم روندی نزولی داشت. افزایش دما و زمان سرخ‌شدن به‌صورت معنی‌­داری باعث افزایش قطر گردیده، اما تأثیر چندانی بر سایر ابعاد بژی نداشت. با افزایش دما و زمان سرخ‌شدن، سختی نمونه‌­ها افزایش یافت و به‌طور کلی، تغییرات رنگ نیز بیشتر گردید. همچنین با افزایش دما و زمان سرخ‌کردن مقدار پارامتر L* کاهش یافت. ثابت سرعت کاهش L* در سه دمای 150، 165 و C°180 به‌ترتیب 009866/0، 07665/0، 1125/0 معکوس ثانیه به‌دست آمد. همچنین با افزایش دما و زمان سرخ‌­کردن مقدار a* افزایش یافت، اما تغییرات b* معنی‌­دار نبود. انرژی فعال‌سازی واکنش­‌های قهوه‌­ای شدن در بژی، 12/31 کیلو کالری بر مول به‌دست آمد که نشان‎دهنده­‌ی تأثیر زیاد دما بر سرعت این واکنش در بازه‎­ی دمایی ذکر شده است. دما و زمان سرخ شدن تأثیر معنی‌داری بر روند تشکیل پوسته داشتند. در دمای °C 150 حداکثر ضخامت پوسته به 55/0 میلی‌متر و در دمای °C 165 و °C 180 به‌حدود 45/1 میلی‌متر رسید. بنابراین، دما و زمان سرخ کردن می‌­تواند اغلب خصوصیات فیزیکوشیمیایی بژی را تحت‌تأثیر قرار دهد.}, keywords_fa = {بژی,سرخ کردن,خصوصیات فیزیکوشیمیایی,تغییرات رنگ,حجم}, url = {https://ifstrj.um.ac.ir/article_33500.html}, eprint = {https://ifstrj.um.ac.ir/article_33500_6885e5e89faf0d207534ff80958a3bec.pdf} }
