بررسی اثر مقادیر مختلف ژلاتین و گوار بر ویژگیهای حسی، بافتی و رنگ پاستیل بر پایه توت سفید
توت سفید میوه ای با ارزش تغذیه ای بالاست. توت به علت داشتن درصد رطوبت بالا، عمر نگهداری زیاد ندارد. توت خشک و شیره توت از جمله فراوردههای متداول بدست آمده از توت هستند. هدف از این پژوهش، تولید پاستیل توت بهعنوان فراوردهای نوین از توت با زمان نگهداری طولانی و ارزش افزوده بالا است که بتواند بصورت یک میان وعده سالم و در مواردی جایگزین قند (برای مصرف با چای و قهوه) مطرح باشد. در این تحقیق برای تهیه پاستیل توت، از ترکیبات هیدروکلوئیدی شامل ژلاتین (صفر، 1 و 2 درصد) و گوار (صفر، 5/0 و 1 درصد)، استفاده شد. ویژگیهای حسی، بافتی و پارامترهای رنگی (L*، *a و b*) نمونههای حاصل مورد بررسی قرار گرفتند. افزایش غلظت گوار باعث افزایش میزان پیوستگی، الاستیسیته و قابلیت جویدن و کاهش چسبندگی نمونهها شد. در بین فرمولهای مورد بررسی، پاستیل توت حاوی 1 درصد گوار و 1 درصد ژلاتین با داشتن کمترین میزان سختی، چسبندگی به دندان و قابلیت جویدن (اهم خواص حسی و بافتی مشترک) و همچنین ویژگیهای رنگی مناسب، بهعنوان فرمول بهینه تعیین شد.

بهینهسازی شرایط تولید پپتیدهای ضداکسایش از هیدرولیز کنسانتره پروتئینی دانه کدو توسط تریپسین به روش سطح پاسخ
در این پژوهش بهینهسازی شرایط هیدرولیز پروتئین دانه کدو(Cucurbita pepo) بهمنظور دستیابی به حداکثر خصوصیات مهارکنندگی رادیکال DPPH و شلاتهکنندگی یون فرو با استفاده از روش سطح پاسخ و با استفاده از طرح مرکب مرکزی مورد بررسی قرار گرفت. به این منظور غلظت آنزیم تریپسین 2-1 درصد، دمای 45-35 درجه سانتی گراد و زمان 5-2 ساعت بهعنوان سطوح متغیرهای مستقل انتخاب شدند. نتایج نشان داد که شرایط بهینه برای دست یافتن به حداکثر خاصیت مهارکنندگی رادیکال DPPH و شلاتهکنندگی یون آهن به ترتیب دمای 35 درجه سانتی گراد، زمان 5 ساعت و غلظت آنزیم 10/1% و دمای 45 درجه سانتی گراد، زمان 05/2 ساعت و غلظت آنزیم 2% و با قابلیت ضداکسایشی و شلاتهکنندگی برابر با 28/76% و 61/49% بود که مشابهت زیادی با نتایج پیشنهاد شده توسط نرمافزار (89/75% و 84/50%) داشت. مقدار R2، 9184/0 و 9761/0 و R2 تعدیل شده 1333/0 و 1827/0 به ترتیب برای خاصیت مهار رادیکال DPPH و شلاتهکنندگی یون آهن توسط نرمافزار تخمین زده شد. بر طبق نتایج بدست آمده پروتئین هیدرولیز شده دانه کدو از قابلیت ضداکسایشی و شلاتهکنندگی مناسبی برخوردار بود.

بهینهسازی پارامترهای عملیاتی دیگ پخت در حین استخراج روغن و تولید کنجاله آفتابگردان در مقیاس صنعتی
مرسومترین روشهای استخراج روغن از دانههای روغنی، استفاده از پرس و حلال میباشد. در پژوهش حاضر، تاثیر درجه حرارت پخت (70، 80 و 90 درجه سانتیگراد) و رطوبت دانههای خروجی از دیگ پخت (7، 5/7 و 8 درصد) بر برخی از خصوصیات شیمیایی روغن آفتابگردان از جمله میزان مواد ریز نامحلول در روغن، اسیدیته، میزان رطوبت، پروتئین و روغن کنجاله بررسی شد. تجزیه و تحلیل آماری و بهینهسازی فرایند به روش سطح پاسخ انجام شد. نتایج نشان داد که با افزایش درجه حرارت پخت میزان مواد ریز نامحلول و اسیدیته روغن افزایش ولی میزان رطوبت و روغن در کنجاله کاهش یافت. با افزایش میزان رطوبت دانههای خروجی از دیگ پخت از میزان مواد ریز نامحلول روغن کاسته ولی بر میزان اسیدیته روغن افزوده شد. با توجه به نتایج بهینهسازی فرایند میتوان بیان نمود که اعمال شرایط دمایی در حدود 70 سانتیگراد و با رطوبت 73/7 و 65/7 درصد دانههای خروجی از دیگ پخت منجر به تولید محصولی با حداقل میزان اسیدیته و مواد ریز نامحلول در روغن و کنجالهایی با کمترین میزان روغن گردید.

ارزیابی ویژگی های فیزیکوشیمیایی و مکانیکی گاودانه (Vicia ervilia) و بررسی خصوصیات عملکردی آرد حاصل از آن
با توجه به نیاز روز افزون بشر به منابع جدید پروتئینی و میزان بالای پروتئین در دانه گاودانه،در این پژوهش خصوصیات فیزیکوشیمیایی و مکانیکی دانه گاودانه و ویژگی های عملکردی آرد حاصل از آن، مورد ارزیابی قرار گرفت؛ همچنین اثر تغییرات pH بر تغییر در میزان حلالیت، ظرفیت کف کنندگی و پایداری آن و ظرفیت امولسیون کنندگی و پایداری آن مورد بررسی قرار گرفت. متوسط طول، عرض و ارتفاع دانه ها به ترتیب 5638/3، 6197/3 و 8365/3 میلی متر و میانگین حسابی و هندسی قطر، ضریب کرویت و سطح به ترتیب 6733/3، 6701/3میلی متر، 0318/1و 405/42 میلی متر مربع بدست آمد. میانگین دانسیته واقعی، دانسیته توده و درصد تخلخل به ترتیب6/1326 کیلوگرم بر متر مکعب،7962/0کیلوگرم بر متر مکعب و 2753/40 درصد و متوسط ضرایب اصطکاک استاتیکی در سطوح تخته سهلایه، شیشه، لاستیک، فایبرگلاس و آهن گالوانیزه به ترتیب 4348/0، 1943/0، 4244/0، 3249/0 و 3739/0 بود. آرد حاصل از این دانه دارای 24 درصد پروتئین و 9 درصد چربی بود وظرفیت جذب آب و روغن، به ترتیب01/0±01/2 و 03/0± 77/1 (گرم آب یا روغن بر گرم نمونه) محاسبه شد. همچنین نتایج نشان داد تغییرات pH در محدوده 3 تا 9، میزان حلالیت، ظرفیت کف کنندگی و پایداری کف و ظرفیت امولسیون کنندگی و پایداری امولسیون آرد گاودانه موثر بود.

برآورد محاسباتی واحدهای رنگی L*a*b* از RGB با کمک پردازش تصاویر دیجیتالی
رنگ اولین ویژگی کیفیت مواد غذایی است که توسط مصرف کنندگان مورد بررسی قرار می گیرد. اندازه گیری رنگ مواد غذایی بهعنوان یک شاخص غیرمستقیم در اندازه گیری دیگر ویژگی های کیفیتی مانند عطر و طعم و محتویات رنگدانه به دلیل سرعت و سادگی در اندازه گیری، و همچنین ارتباط با سایر خواص فیزیکی محصولات غذایی مورد استفاده قرار می گیرد. در میان فضاهای رنگی مختلف، عموما در اندازه گیری رنگ مواد غذایی، از فضای رنگی L*a*b* با توجه به توزیع یکنواخت و نزدیکی بسیار زیاد به ادراک انسان استفاده می شود. بطور کلی رنگ سنج های تجاری هنگام اندازه-گیری رنگ، سطح کوچکی از محصول را پوشش می دهند. در مقابل دوربین های دیجیتال اطلاعات پیکسلی را در اختیار کاربر قرار می دهند؛ این پژوهش یک راهحل محاسباتی بهمنظور استخراج واحدهای L*a*b* از اطلاعات پیکسلی تصاویر RGB دیجیتال را ارائه می دهد. در این مطالعه بهمنظور تبدیل واحدهای RGB به L*a*b* از چهار مدل: خطی، درجه دوم، شبکه عصبی مصنوعی (ANN) و رگرسیون بردار پشتیبانی (SVR) استفاده گردید. در ارزیابی مدل ها، رگرسیون بردار پشتیبانی و مدل شبکه عصبی به ترتیب با خطای 88/0 و 37/2 بهترین عملکرد را از خود نشان دادند. با توجه به مدل های شکل گرفته، ارتباط خوبی بین رنگ اندازه گیری و برآورد شده تشکیل شده بود. بنابراین، بر اساس نتایج بدست آمده از بینایی ماشین، روش توصیه شده در این پژوهش برای تبدیل دقیق رنگ یک محصول غذایی از روی اطلاعات پیکسلی یک دوربین دیجیتال به L*a*b* مناسب می باشد.

اثر صمغهای دانه ریحان و گزانتان بر ویژگیهای فیزیکی و رئولوژیکی سس مایونز کمچرب
در این تحقیق، اثر سطوح مختلف صمغ گزانتان و صمغ دانه ریحان بهعنوان جایگزینهای چربی در غلظت 45/0، 6/0 و 75/0 درصد بر خواص رئولوژیکی، پایداری امولسیون، پارامترهای رنگ و اندازه قطرات روغن سس مایونز کمچرب مورد بررسی قرار گرفت. خصوصیات جریان نمونهها با استفاده از مدلهای پاورلا، بینگهام، هرشل- بالکی و کاسون توصیف شد. نتایج نشان داد تمامی نمونهها جزء سیالات غیرنیوتنی سودوپلاستیک میباشند. با افزایش غلظت صمغ (گزانتان، ریحان و مخلوط گزانتان- ریحان) از 45/0 تا 75/0درصد، شاخص رفتار جریان تمامی نمونه ها کاهش پیدا کرد، در حالی که ضریب قوام و ویسکوزیته ظاهری افزایش یافت. بیشترین ضریب قوام به نمونه محتوی 75/0 درصد صمغ گزانتان تعلق داشت، اما کمترین مقدار مربوط به نمونه تثبیت شده با 45/0 درصد صمغ دانه ریحان بود. تمام نمونهها در طول نگهداری پایداری بالایی داشتند. امولسیون حاوی 45/0 درصد صمغ دانه ریحان پایینترین اندازه قطرات روغن را داشت. سس مایونز تثبیت شده با 45/0 درصد صمغ گزانتان بیشترین پارامتر رنگی L را به خود اختصاص داد.

ارزیابی ویژگیهای ساختاری و عملکردی پروتئین سه ژنوتیپ مختلف لوبیا (Phaseolus vulgaris)
امروزه تقاضا برای استفاده از پروتئین های گیاهی در حال افزیش است زیرا این پروتئین ها منابعی قابل دسترس و ارزان هستند. لذا در این تحقیق پروتئین سه ژنوتیپ مختلف لوبیا (Phaseolu svulgaris) شامل پاچ باقلا (Speckled Sugar)، قرمز (Red Mexican) و سفید (Great Northern) با استفاده از روش قلیایی- اسیدی استخراج و ویژگیهای ساختاری (الکتروفورز، حلالیت، آبگریزی) و عملکردی آنها در سیستمهای مختلف غذایی (امولسیون، ژل و کف) در دامنه پی اچ 3 تا 7 مورد بررسی قرار گرفت. الکتروفورز پروتئینها نشان داد که فازئولین بخش عمده تشکیلدهنده هر سه نوع پروتئین مورد بررسی است. ارزیابی حلالیت پروتئینها نیز مشخص نمود که هر سه پروتئین دارای حلالیت بسیار مناسب هستند بطوریکه حلالیت پروتئین لوبیا پاچ باقلا در پیاچ 7، 83 درصد بود. همچنین بررسی آبگریزی سطحی نشان داد که پروتئین لوبیای پاچ باقلا کمترین و پروتئین لوبیا سفید بیشترین آبگریزی را دارا بودند (05/0P<). بهعلاوه هر سه پروتئین کمترین آبگریزی سطحی را در پیاچ 7 نشان دادند. ارزیابی ویژگیهای عملکردی پروتئینها نیز بیانکننده این مطلب بود که توانایی امولسیونکنندگی بیشتر تحت تاثیر حلالیت پروتئین و در مقابل توانایی تشکیل ژل و کفکنندگی تحت تاثیر آبگریزی پروتئینها بوده است بطوریکه بیشترین ظرفیت امولسیونکنندگی برای هر سه پروتئین در پیاچ 7 (70-77 درصد) اما بیشترین توانایی تشکیل ژل (6 درصد پروتئین) و کف (130-150 درصد) در پیاچ 3 مشاهده گردید. نتایج این پژوهش نشان داد با توجه به تاثیر مستقیم ویژگیهای ساختاری پروتئین بر عملکرد آن، این ویژگیها باید قبل از انتخاب پروتئین برای استفاده در سیستمهای مختلف غذایی مورد توجه قرار گیرند.

بررسی مکانیکی تخریب بافت خلال سیبزمینی طی فرآیند سرخکردن
در این پژوهش تغییرات بافت خلال سیبزمینی طی مراحل مختلف سرخکردن شامل حرارتدهی اولیه، جوشش سطحی و مرحله نرخ کاهشی مورد بررسی قرار گرفت. برای این منظور، فرآیند سرخکردن در سه دمای ثابت 145، 160 و °C 175 به مدت 30، 60، 90، 120، 150، 180، 210 و 240 ثانیه انجام گرفت. سپس با کمک ثبت سینتیک تغییرات دمای سطحی و مرکزی محصول توسط دستگاه ثبت داده در کامپیوتر، مراحل مختلف فرآیند از یکدیگر تفکیک شد. شدت حرارتدهی در هر مرحله با پارامتر ارزش پخت نیز تعیین گردید. همچنین رفتار تغییر بافت محصول توسط شاخص های مکانیکی بهصورت مدول ظاهری الاستیسیته (مدول سکانت) و چقرمگی توصیف شد. سینتیک نرمشدگی در دماهای مختلف روغن با استفاده از برازش مدل تبدیل جزئی روی تغییرات مدول سکانت تخمین زده شد. نتایج نشان داد، بخش عمده تخریب بافت در حرارتدهی اولیه اتفاق می افتد و در انتهای مرحله جوشش سطحی تغییرات شاخص بافت رو به ثابت شدن رفت. با افزایش دمای روغن شیب رگرسیونی تغییرات تابع تبدیل جزءکاهش یافت و محصول سخت تر بود، امّا میزان تعادلی مدول سکانت مستقل از دمای فرآیند بود. بافت مطلوب از نظر مصرفکننده در دمای °C 160 با ارزش پخت متوسط بدست آمد.

تشخیص همزمان باکتریهای بیماریزای لیستریا منوسایتوژنز، اشرشیا کلی O157:H7 و جنس سالمونلابه روش multiplex PCR در سبزیجات آماده مصرف
آلودگیهای باکتریایی مواد غذایی یکی از مهمترین مسائل در زمینه ایمنی مواد غذایی میباشد.لذا استفاده از روشهای تشخیصی سریع و دقیق حائز اهمیت است. یکی از مهم ترین این روشها، تکنیک مولکولی PCR است که امکان تشخیص دقیق و با حساسیت بالا در مدت زمان کم، از مزایای آن است. اما در صورتیکه تشخیص چندین باکتری بیماریزا مد نظر باشد،multiplex PCR (mPCR)بهترین گزینه خواهد بود. در این تحقیق از سه باکتریلیستریا منوسایتوژنز، اشرشیا کلی O157:H7و جنس سالمونلا (سالمونلا انتریکا سرووار تیفی موریوم) که از باکتریهای بیماریزای مهم منتقل شده از طریق آب و مواد غذایی هستند استفاده شد و به کاهو، که نمونه ای از سبزیجات پر مصرف در تهیه سالاد های آماده است، تلقیح و با روش mPCR بطور همزمان شناسایی شدند. بدین منظور مخلوطی از پرایمر های اختصاصی مربوط به باکتریها یعنی، invA( پروتئین تهاجمیA)برای جنس سالمونلا با 284 جفت باز، prfA(پروتئین افزایش دهنده نسخه برداری از ژنهای عامل ویرولانس) برای لیستریا منوسایتوژنزبا 217 جفت باز وrfb (ژن مسئول تولید آنتی ژنO157) برایاشرشیا کلی O157:H7با 420 جفت باز،به همراه DNAاستخراج شده از مخلوط سه باکتری تلقیح شده به کاهو و سایر معرف های واکنشPCR به یک لوله واکنش، منتقل و همزمانPCRشدند. با این روش، امکان تشخیص همزمان سه باکتری بیماریزای فوق با حساسیت cfu/g1امکان پذیر شد.

مطالعه تاثیر غلظت نانو ذرات اصلاح شده رس بر برخی ویژگی های ریزساختاری و فیزیکی نانوکامپوزیت پلی اتیلن ترفتالات/ نانورس
هدف از پژوهش حاضر بررسی تاثیر افزودن نانورس بر خصوصیات مکانیکی، رنگ سنجی و شفافیت فیلم های پلی اتیلن ترفتالات بود. بدین منظور نانوکامپوزیت بر پایه پلی اتیلن ترفتالات حاوی 1%، 3% و 5% وزنی نانورس اصلاح شده (Cloisite 15A) با روش مخلوط مذاب تهیه شد. نتایج طیفسنجی FTIR ایجاد پیوند بین گروه های سطحی هیدروکسیل موجود در نانورس با گروه های انتهایی هیدروکسیل و کربوکسیل در زنجیره پلی اتیلن ترفتالات خالص و در نتیجه تشکیل موفق نانوکامپوزیت حاوی نانورس را تایید نمود. نتایج آزمون مکانیکی نشان داد بیشترین مقدار مدول یانگ مربوط به نانوکامپوزیت حاوی 3 درصد وزنی نانورس می باشد که حدود 8 مگاپاسکال افزایش یافته است. همچنین افزودن نانو رس تا سطح 3 درصد میزان نفوذپذیری بخار آب را حدود 5/83 درصد نسبت به فیلم پلی اتیلن ترفتالات خالص کاهش می دهد. اگرچه با افزودن نانورس از شفافیت فیلم های نانوکامپوزیتی حاصل کاسته شده، با این حال افزودن این نانو ذرات سبب کاهش درصد عبور امواج در هر سه ناحیه UV شد که باعث بهبود اثر حفاظتی فیلم به عنوان بسته بندی مواد غذایی می گردد.

بررسی عددی تغییرات منطقه سرد کنسرو غذایی نشاستهای تحت تاثیر غلظت نشاسته و دمای اولیه پر کردن
تعیین دقیق منطقه سرد کنسرو غذایی بواسطه دیرتر رسیدن آن به درجه استریلیزاسیون اهمیت بالایی در تعیین شدت یک فرایند حرارتی دارد. در این مطالعه با کمک روش های عددی، اثر غلظت محلول های 5/3 و 5% نشاسته و دمای پرکردن 50 و 75 درجه سانتیگراد بر ژلاتینه شدن نشاسته و مکان نقطه سرد قوطی مورد مطالعه قرار گرفت. قوطی ها بدون سرفضای خالی و بصورت ایستا حرارت دهی شدند. نتایج نشان دادکه در قوطی های بدون سرفضای خالی در حالت ایستا، نقطه سرد در نزدیکی یک-دهم انتهایی قوطی قرار دارد. تغییر غلظت نشاسته از 5/3 به 5 درصد، باعث طولانی تر شدن زمان فرآیند می شود. این افزایش زمان فرآیند حرارتی، در یک-دهم انتهایی قوطی بیشتر از سه-دهم انتهایی است. زمان ثابت شدن دمای نقطه سرد در هر دو نقطه سه-دهم و یک-دهم انتهایی نیز با تغییر غلظت تغییر می کند. اختلاف دما در نمونه 5 درصد در زمان ثبات دما بسیار چشمگیرتر از اختلاف دما در لحظه افزایش دما در نمودار حرارتی 5/3 درصد است. با افزایش غلظت نشاسته در محلول، زمان لازم بری جلو رفتن یک سیکل حرارتی در نمودار دما- زمان (f) در سه-دهم انتهایی کاهش و در یک-دهم انتهایی افزایش می یابد. این اختلاف شیب در غلظت های 5/3 و 5 درصد بیشتر از یک-دهم انتهایی است. علت آن ژلاتینه شدن سریع نشاسته در یک سوم انتهایی قوطی است.

بررسی تاثیر آغازگر لاکتوباسیلوس غالب جدا شده از خمیرترش سنّتی بر میزان بیاتی نان قالبی حاصل از آرد کامل گندم
در این پژوهش پس از جداسازی آغازگر لاکتوباسیلوس غالب موجود در خمیرترش سنّتی حاصل از آرد کامل گندم و تائید شناسایی آن با استفاده از PCR دارای پرایمر اختصاصی، از آغازگر مذکور جهت تولید خمیرترش استفاده شد. سپس تاثیر زمان تخمیر (8 ،16، 24 ساعت) و مقدار شکر (5/0، 1، 5/1درصد) بر فعالیت آغازگر لاکتوباسیلوس جدا شده مورد ارزیابی قرار گرفت. پس از فرآوری نان قالبی با استفاده از تیمارهای خمیرترش ، بیاتی نانهای تولیدی در یک بازه زمانی چهار روزه (2، 48 و 96 ساعت پس از پخت) براساس شاخص سفتی بافت (به روش بافتسنجی) مورد بررسی قرارگرفت. همچنین میزان تخلخل (به روش پردازش تصویر) و ویژگی های حسّی نان تازه خوری نیز با نمونه شاهد مقایسه شد. نتایج حاصل نشان داد که کمترین و بیشترین میزان سفتی بافت نان پس از 96 ساعت به ترتیب مربوط به نمونه های فرآوری شده با خمیرترش تخمیر شده طی 24 ساعت و دارای 5/0 درصد شکر و همچنین خمیرترش تخمیر شده طی 8 ساعت و دارای 5/1درصد شکر بود. علاوه بر این، بیشترین مقدار تخلخل نان تازهخوری در نمونه حاصل از تخمیر 24 ساعت خمیرترش و محتوی 5/1 درصد شکر و کمترین مقدار آن نیز در نمونه حاصل از 8 ساعت تخمیر با محتوی 5/0 درصد شکر مشاهده گردید. پس از ارزیابی نتایج حاصل از این آزمون ها، رابطه بین عوامل موثر بر تخمیر خمیرترش بهمنظور بررسی خصوصیات بافتی نان های تولیدی بر اساس رفتار ویسکوالاستیک آن ها نیز مورد بررسی قرار گرفت.

کاربرد پس از برداشت نانو کربنات کلسیم بر فعالیت آنزیمی و برخی خصوصیات کیفی در سیب تازه بریده رقم ’گلدن دلیشز‘
با توجه به حساس بودن برشهای تازه میوه به عوامل ایجاد ضایعات استفاده از روش های تکمیلی برای نگهداری آنها ضروری می باشد و برای این منظور استفاده از فناوریهای نوین در نگهداری این محصولات، اجتنابناپذیر می باشد. نظر به نقش کلسیم در استحکام بافت و حفظ کیفیت میوه های تازه بریده شده، این پژوهش با هدف بررسی اثر نانو کربنات کلسیم در حفظ کیفیت میوه های تازه بریده شده سیب زرد لبنانی طی مدت نگهداری، انجام شد. میوه سیب پس از برداشت و آمادهسازی با نانوکربنات کلسیم، پوشش دهی و بههمراه نمونههای شاهد در دمای 5/0±1 درجه سانتیگراد و رطوبت نسبی 90 تا 95 درصد به مدت 20 روز نگهداری شد. هر 10 روز یک بار و در طول مدت نگهداری فعالیتهای آنزیمی (کاتالاز و پلیفنلاکسیداز)، آنتیاکسیدان کل و برخی خصوصیات کیفی ویتامین ث و افت وزن مورد ارزیابی قرار گرفتند. نتایج نشان داد که پوششدهی میوه های تازه بریده سیب با نانو کربنات کلسیم باعث کاهش فعالیتهای آنزیمی مخرب در سطح احتمال 1 درصد شد. بطوری که در مقایسه با نمونه ی شاهد در نمونههای تیمار شده میزان فعالیت آنزیم پلیفنلاکسیداز کاهش یافت، همچنین، فعالیت آنتیاکسیدانی و میزان آنزیم کاتالاز در میوه های پوشش داده شده در مقایسه با نمونه های شاهد در طی مدت نگهداری در سردخانه بیشتر بود. از بین تیمارهای مورد استفاده، تیمار بعد برش با غلظت 1/0 درصد بیشترین تاثیر را در حفظ ویتامین ث با مقدار94/6 میلیگرم اسید آسکوربیک و درصد کاهش وزن با مقدار 01/2 درصد در طی مدت نگهداری نشان داد. پوششدهی میوه تازه بریده سیب با نانو کربنات کلسیم میتواند بهعنوان روشی کارا در افزایش ماندگاری میوه سیب در سردخانه و حفظ بهتر کیفیت این میوه سلامتی بخش معرفی شود.

استخراج عصاره خام از برگ گیاه پنیرک (Malva neglecta) و بررسی توانایی جذب رادیکال آزاد آن
در این تحقیق، تأثیر عوامل زمان، دما و نسبت حلال به ماده خشک در میزان عصاره خام استخراجی از برگ گیاه پنیرک گونهMalva neglecta مورد مطالعه قرار گرفت. برای این منظور از روش استخراج با آب داغ و زمان استخراج 1 تا 8 ساعت، دمای 50 تا 100 درجه سانتی گراد و نسبت حلال به ماده خشک 3 تا 30 میلی لیتر بر گرم استفاده گردید. از روش سطح پاسخ نیز جهت یافتن تأثیر متقابل فاکتورها و برآورد بهترین شرایط فرآیند به کمک طرح (BBD) Box-behnken با سه متغیر در سه سطح و 5 تکرار در نقطه مرکزی استفاده گردید. همچنین ویژگی جذب رادیکال های آزاد DPPH، هیدروکسی و سوپراکسید به کمک آزمون های شیمیایی بررسی شد. بهینه سازی بازده استخراج به کمک روش سطح پاسخ نشان داد که می توان با ترکیبی از زمان استخراج 6 ساعت، دمای استخراج 90 درجه سانتی گراد و نسبت حلال به ماده خشک 19، به بالاترین بازده استخراج عصاره خام (18/9 درصد) دست یافت. بهعلاوه، نتایج آزمون های شیمیایی نشان دادند که عصاره خام استخراجی دارای فعالیت قوی جذب رادیکال های آزاد DPPH، هیدروکسیل (OH) و سوپراکسید می باشد به طوری که توانایی جذب این رادیکال های آزاد توسط عصاره خام استخراجی بیشتر از آنتی اکسیدان طبیعی اسید آسکوربیک و مصنوعیBHT می باشد. براساس یافته های این پژوهش، ترکیبات استخراج شده از برگ های این گیاه می تواند به عنوان یک ترکیب آنتی اکسیدان و جاذب رادیکال آزاد معرفی شود و از آن در صنایع غذایی، دارویی و بهداشتی استفاده گردد.

تغییرات خصوصیات عملکردی و پایداری پروتئینهای سویای متصل شده به دکستران با استفاده از واکنش طبیعی مایلارد
در این تحقیق پروتئینهای ایزوله سویا با دکستران از طریق واکنش طبیعی مایلارد کانژوگه شد. الگوی الکتروفورز نشان داد کانژوگههای پروتئین-پلی ساکارید شکل گرفتهاند. اندازهگیری شدت قهوهای شدن و میزان جذب UV نتایج الکتروفورز را تأیید کرد. بررسی خصوصیات عملکردی پروتئینهای نشان داد که پایداری حرارتی، حلالیت و خصوصیات امولسیفایری پروتئینهای سویا با کانژوگه شدن بهبود یافته است. پایداری نوشیدنی سویای تولید شده با پروتئینهای کونژوگه در مقابل فرایند حرارتی و در طول زمان نگهداری در مقایسه با نوشیدنی سویای تهیه شده بر پایه پروتئینهای غیرکونژوگه افزایش یافت. در مجموع میتوان نتیجهگیری کرد که امکان استفاده از واکنش مایلارد بهعنوان راهی برای تهیه کانژوگههای پروتئینهای سویا-دکستران با خصوصیات عملکردی و پایداری بهتر وجود دارد.

مقایسه اثر دو مدل تیغه لبه صاف و دندانهای(ارهای)، بر فرآیند استخراج قند از چغندرقند و کیفیت شربت خام
کیفیت خلال روی عمل اسمز در فرآیند استخراج قند از چغندرقند از اهمیت ویژهای برخوردار است. باتوجه به تاثیر لبه تیغه بر پارگی سلولهای سطح برش، در این مطالعه اثر دو مدل تیغه لبه صاف و لبه ارهای با انجام آزمایشات در سه تکرار بر فرایند استخراج مورد بررسی قرار گرفت. نتایج این پژوش نشان داد نوع تیغه بر درجه خلوص و ماده غیرقندی، جرم ساکاروز در شربت دیفوزیون، درصد قند خارج شده ناشی از برش خلال، قند استخراج شده در دیفوزیون، درجه استخراج قند، بازده تفاله، زمان و انرژی مصرفی در سطح 5% معنیدار است. بیشترین درجه خلوص از شربت حاصل از خلالهای تهیه شده با تیغه صاف 33/78، 86/84 و 52/85 درصد و کمترین مقادیر ماده غیر قندی برای همین تیمار 1/0، 55/0 و 51/0 درصد به ترتیب برای مراحل شستشوی خلالها، پیش گرمکن و دیفوزیون بدست آمد. با استفاده از تیغه لبه ارهای قند استخراج شده در اثر برش چغندر 5/14 درصد، قند استخراج شده در دیفوزیون4/ 94 درصد، جرم ساکاروز شربت22/7 گرم و درجه استخراج 19/0 بدست آمد که این مقادیر نسبت به حالتی که از تیغه لبه صاف برای تهیه خلال استفاده میشود؛ بیشتر بدست آمد. همچنین با استفاده از تیغه ارهای بازده تفاله پرس شده 97/28 درصد، زمان استخراج به مدت40 دقیقه و انرژی مصرفی 7/1 کیلووات بر ساعت بدست آمد که در مقایسه با استفاده از تیغه لبه صاف بهطور معنیداری کمتر بود.

بررسی تاثیر نگهداری سرد ماهی فیتوفاگ (Hypophthalmichthys molitrix) برخصوصیات کیفی سوریمی تولیدی
در این پژوهش، تغییرات میکروبی، شیمیایی و حسی سوریمی تهیه شده از ماهی فیتوفاگ نگهداری شده در یخ به مدّت 16 روز مورد بررسی قرار گرفت. میزان شاخص بازهای ازته فرار، تیوباربیتوریک اسید، رطوبت تحت فشار، حلالیت پروتئین، سفیدی، قابلیت تا شدن، pH و بار میکروبی (بار باکتریایی کل و سرمادوست) سوریمی اندازهگیری شد. آنالیزهای حسی با ارزیابی پارامترهای طعم، بو، رنگ و پذیرش کلی نمونههای سوریمی انجام گرفت. این آزمایش ها در یک دوره زمانی 16 روزه در فواصل روزهای 0، 4، 8، 12 و 16 انجام شد. بر اساس نتایج بدست آمده میزان بازهای ازته فرار از 06/13 در روز صفر به 8/29 میلیگرم نیتروژن بر 100 گرم نمونه، تیوباربیتوریک اسید از 39/•به 96/ میلیگرم مالون آلدهید بر کیلوگرم نمونه، رطوبت تحت فشار از 18/12 به 49/30 درصد، pH از 06/7 به 41/7، بار باکتریایی کل از 05/4 به log cfu/g 1/9 و بار باکتریایی سرمادوست از 75/3 بهlog cfu/g 64/8 در روز 16 نگهداری رسید. میزان حلالیت پروتئین و سفیدی طی مدّت نگهداری بطور معنیداری دارای روند نزولی بود و به ترتیب از 21/93 درصد و 4/84 در روز صفر به 75/67 درصد و 6/73 در روز 16 نگهداری کاهش یافت و قابلیت تا شدن از امتیاز AA در روز صفر نگهداری به امتیاز Cدر آخرین روز نگهداری رسید. بر اساس نتایج آزمونهای میکروبی و حسی ماهی فیتوفاگ از روز 12 نگهداری به بعد کیفیت خود را از نظر تولید سوریمی مناسب از دست داده بود.
