بهینهسازی ویژگیهای بافتی پنیر فتای فراپالایش آنالوگ تولیدشده ازترکیبات لبنی و غیرلبنی
در این پژوهش از مخلوط کنسانتره پروتئینی شیر، کنسانتره پروتئینی آبپنیر، شیر خشک پسچرخ، شیرسویا، مارگارین، کره و آب برای تولید پنیر فتای فراپالایش بازساخته استفاده شد. متغیرها عبارت بودند از: کنسانتره پروتئینی شیردر سه سطح 8، 9 و 10 درصد، کنسانتره پروتئینی آبپنیردر سه سطح صفر، 5/1 و 3 درصد، شیرسویا در سه سطح 5، 10 و 15 درصد و مارگارین در سه سطح صفر، 5 و 10 درصد. نمونهها از نظر ویژگیهای بافتی پس از روز سوم تولید، آنالیز شدند. نتایج در قالب طرح مرکب مرکزی بررسی و بهروش سطح پاسخ مدلسازی و تجزیه و تحلیل شدند. ضریب تبیین مدلهای رگرسیون برازششده برای صفات مختلف بین 59/89 تا 80/97 متغیر بوده و فاکتور عدمبرازش تمامی صفات در سطح اطمینان 95 درصد معنیدار نبود، ازاینرو صحت مدل برای برازش اطلاعات تأیید گردید. با توجه به نتایج، شرایط بهینه بهدست آمده برای تولید پنیری که سختی و پیوستگی مناسبی داشته و از کمترین مقدار چسبندگی برخوردار باشد عبارت بود از: 13/9 درصد کنسانتره پروتئینی شیر، 3 درصد کنسانتره پروتئینی آبپنیر، 15درصد شیرسویا و 65/7 درصد مارگارین.

اثر دوره تابش و توان مایکروویو در خشک کردن برنج
در این تحقیق اثر توانهای مختلف (90، 270 و 450 وات) و دوره تابش یعنی زمان های روشن–خاموش (60/30 و 120/30 ثانیه/ثانیه) بر روی نسبت خشک شدن و صدمه دانه در خشک کردن بهروش مایکروویو در دو رقم نعمت و هاشمی موردبررسی قرار گرفت. طبق نتایج بهدست آمده، مدل میدیلی و همکاران بهترین پیشبینی را برای خشک کردن رقم نعمت در دوره 60/30 نشان داد. علاوهبراین مدل Two-term برای رقم هاشمی در دورههای 60/30 و 120/30 و برای رقم نعمت در دوره 120/30 بهترین پیشبینی را داشت. طبق نتایج این تحقیق برای رقم هاشمی توان 270 وات و دوره 120/30 توصیه میشود. در این شرایط شکست دانه 1/19 درصد بود. در تمام حالات درصد شکست در رقم نعمت بالای 40 درصد بود و این نشان میدهد این رقم مناسب خشک کردن با مایکروویو نیست. توصیه میشود یک پیشآزمایش قبل از انجام آزمایشهای مایکروویو انجام شود.

تغییرات کشش سطحی و گرانروی نانوامولسیون روغن ماهی تولیدشده با روش فراصوت طی انبارمانی
مصرف کافی از اسیدهای چرب ضروری امگا 3 تأثیری مثبت بر سلامت انسان دارد. برای دستیابی به این هدف از مواد غذایی فراسودمند غنیشده با اسیدهای چرب ضروری میتوان بهره برد. نانوامولسیونها میتوانند بهعنوان یک سیستم تحویل اسیدهای چرب ضروری در موادغذایی مختلف و نوشیدنیها مورداستفاده قرار گیرند. در این مطالعه، نانوامولسیون روغن ماهی تولیدشده با روش فراصوت در نسبتهای مختلف HLB و SOR طی نگهداری در دو دمای 4 و 25 درجه سانتیگراد برای مدت 1 ماه تحت آزمونهای مختلفی قرار گرفتند. در نیمی از نمونهها از آلفاتوکوفرول با غلظت 100 پیپیام استفاده گردید. با افزایش میزان HLB و SOR، اندازه ذره و کشش سطحی کاهش ولی گرانروی و ضریب شکست افزایش یافتند. طی انبارمانی، اندازه ذرات نانوامولسیون حاوی آنتیاکسیدان آلفاتوکوفرول کاهش یافت اما اندازه ذرات نانوامولسیونهای بدون آلفا توکوفرول (طی روندی وابسته به دمای نگهداری) افزایش یافت. صرف نظر از دمای نگهداری، کشش سطحی نانوامولسیونهای حاوی آنتیاکسیدان آلفا توکوفرول ثابت باقی ماند، هرچند که ویسکوزیته آنها افزایش یافت. پایداری شیمیایی نمونههای حاوی آنتیاکسیدان بهدلیل قرار گرفتن آنها در فضای بین سطحی نسبتاً افزایش یافت. تصاویر میکروسکوپ الکترونی عبوری وجود ذرات در مقیاس نانومتر را تأیید نمودند. نتایج این تحقیق ممکن است به طراحی غذاهای فراسودمند با استفاده از سیستمهای تحویل بر پایه نانوامولسیون کمک نماید.

اثر اولتراسوند حمام و پروب در ترکیب با محلولهای آبنمک و آبنمک-پلیفسفات بر خواص کیفی و بافتی گوشت گاو
تکنیکهای مختلف مکانیکی، آنزیمی و شیمیایی برای بهبود کیفیت گوشت استفاده میشود. چنین تکنیکهایی معایبی مانند زمانبر بودن و آسیب رساندن به شاخصهای کیفی گوشت دارند. اولتراسوند بهعنوان یک روش مؤثر برای اصلاح خواص تکنولوژیکی و ترد کردن گوشت استفاده میشود. نمونههای گوشت (از قسمت قلوهگاه) درون محلول نمکی یا مخلوطی از محلول آبنمک-پلیفسفات در التراسوند حمام (در فرکانس 37 کیلوهرتز) و پروب (20 کیلوهرتز) در دماهای 30، 40 و 50 درجه سانتیگراد بهمدت 20، 25 و 30 دقیقه تحت تیماردهی قرار گرفتند. تغییرات خواص تکنولوژیکی و بافتی نمونههای گوشتی موردبررسی قرار گرفت. نتایج افزایش pH (از 55/5 برای نمونه کنترل تا 14/7)، ظرفیت نگهداری آب (WHC) (از 00/20% برای نمونه کنترل تا 38.15%)، ظرفیت اتصال آب (WBC) (از 63/12% برای نمونه کنترل تا 65/31%) و یک کاهش در افت خونابه (از 50/12% برای نمونه کنترل تا 21/3%)، افت پخت (از 70/36% برای کنترل تا 46/16%) را نشان داد. همچنین پارامترهای بافتی از جمله سختی و قابلیت جویدن کاهش، درحالیکه تردی افزایش یافت. بهطورکلی، تیمار اولتراسوند پروب درون محلول ترکیبی آب نمک-پلیفسفات کارآمدتر بود. میتوان نتیجه گرفت که التراسوند یک روش مؤثر برای بهبود کیفیت گوشت میتواند باشد.

تولید و ارزیابی فیلم نانوکامپوزیتی کیتوزان-مونتموریلونیت حاوی اسانس مرزه (Satureja hortensis)
در تحقیق حاضر، خصوصیات فیزیکوشیمیایی و ضدمیکروبی فیلمهای فعال نانوکامپوزیتی کیتوزان-نانورس حاوی مقادیر مختلف اسانس مرزه (5/0، 1 و 2 درصد حجمی/حجمی) موردارزیابی قرار گرفت. با افزودن اسانس به فیلمها، مقاومت به کشش، کاهش و کششپذیری فیلمها، بهطور معنیداری افزایش پیدا کرد. نتایج نشان داد که از بین نمونههای فیلم موردآزمون، فیلم شاهد دارای کمترین میزان نفوذپذیری نسبت به عبور بخار آب بود. همچنین با افزایش غلظت اسانس، حلالیت در آب و شفافیت فیلمها کاهش یافت. نتایج آزمون گرما وزنسنجی (TGA) نشان داد که فیلمهای حاوی اسانس مرزه نسبت به فیلم شاهد دارای دمای تخریب بالاتری هستند. در ادامه خصوصیات ساختاری و مورفولوژیکی فیلمهای نانوکامپوزیتی، بهوسیله روش پراش پرتو ایکس (XRD) و میکروسکوپ الکترونی روبشی (SEM) موردبررسی قرار گرفت. فیلمهای حاوی اسانس مرزه، روی باکتریهای گرم مثبت ( Bacillus cereus و Staphylococcus aureus) نسبت به باکتریهای گرم منفی (Escherichia coli و Salmonella typhimurium) تأثیر بازدارندگی بیشتری داشتند. درنهایت نتایج نشان داد که اسانس مرزه میتواند بهعنوان یک ماده ضدباکتری طبیعی در ساخت فیلمهای زیستتخریبپذیر ضدمیکروب مورداستفاده قرار گیرد.

مطالعه اثر ساکارز و لاکتوز بر ویژگیهای رئولوژیکی صمغ دانه قدومه شیرازی در ناحیه رقیق
امروزه تقاضا برای هیدروکلوئیدها نه تنها بهمنظور بهبود خواص رئولوژیکی مواد غذایی، بلکه جهت حفظ ویژگیهای آنها تحتتأثیر افزودنیهای غذایی افزایش یافته است. در این مطالعه ویژگیهای ناحیه رقیق صمغ دانه قدومه شیرازی برای درک خواص مولکولی و ساختمانی آن در حضور ساکارز و لاکتوز موردبررسی قرار گرفته است. مدل تانگ و رائو بهعنوان بهترین مدل برای تخمین ویسکوزیته ذاتی انتخاب شد. نتایج این پژوهش نشان داد که به جز آب، محلولهای ساکارز و لاکتوز به دلیل کاهش ویسکوزیته ذاتی، حجم مخصوص متورم، تابع شکل و ابعاد مارپیچ، حلالهای ضعیفی برای صمغ دانه قدومه شیرازی هستند. با افزایش غلظت ساکارز و لاکتوز، شعاع مارپیچ کاهش مییابد. کاهش پارامترهای شکل و حجم متورم در حضور ساکارز و لاکتوز در مقایسه با محلول بدون قند نشاندهنده اثر منفی قندها بر حجم مولکولی صمغ است. ارزیابی ویژگیهای ناحیه رقیق این صمغ در محلولهای ساکارز و لاکتوز وجود کنفورماسیون بیضی شکل و احتمالاً حلقه تصادفی بدون درگیری مولکولی را در صمغ دانه قدومه شیرازی نشان داد.
