تأثیر افزودن پوست انار، صمغ گوار و آنزیم همیسلولاز بر خصوصیات کیک اسفنجی فاقد گلوتن بر پایه نشاسته گندم
کیک اسفنجی یکی از فرآوردههای پر تقاضا و پرمصرف غلات بوده اما بهدلیل داشتن گلوتن برای بیماران سلیاکی مناسب نیست. به همین جهت امروزه توجه به محصولات فاقد گلوتن گسترش یافته است. از طرفی غنیسازی کیکها با فیبرهای رژیمی و آنتیاکسیدانهای طبیعی، ارزش غذایی این محصولات را افزایش میدهد. بنابراین هدف از این تحقیق بررسی تأثیر جایگزینی پوست انار (12-0%)، صمغ گوار (5/1-0%) و آنزیم همیسلولاز (ppm90-0) بر ویژگیهای فیزیکوشیمیایی و حسی کیک اسفنجی فاقد گلوتن بر پایه نشاسته گندم است. بدین منظور از طرح آماری روش سطح پاسخ طرح مرکب مرکزی استفاده گردید. نتایج آزمونهای مختلف نشان داد که با افزایش درصد جایگزینی پوست انار در فرمولاسیون، دانسیته و شاخصهای رنگی b*و L* کاهش و رطوبت، درصد بازدارندگی رادیکال DPPH، سفتی و شاخص رنگی a* افزایش یافت. از طرفی افزایش درصد جایگزینی صمغ باعث افزایش دانسیته و سفتی شد. افزودن آنزیم سبب کاهش روشنایی پوسته و افزایش دانسیته گردید. در ادامه خصوصیات کیک بهینه (یعنی کیکی که سفتی و دانسیته آن مشابه شاهد باشد) شامل 1/9 درصد پوست انار و 56/0 درصد صمغ گوار و فاقد آنزیم با کیک شاهد مقایسه گردید و نتایج نشان داد، خصوصیات فیزیکی، شیمیایی و بافتی کیک بهینه تا حد زیادی به کیک شاهد مشابه بوده و تفاوت اصلی در خواص حسی ناشی از پس طعم پوست انار بوده که با استفاده از طعم دهندهها قابل اصلاح است.

بررسی تغییرات ترکیب تقریبی و فاکتورهای فیزیکی ناگت ماهی کپور نقرهای ((Hypophthalmichthys molitrix طی سرخ کردن مقدماتی در روغنهای مختلف گیاهی و دماهای متفاوت
چکیده
در این تحقیق اثر روغنهای مختلف گیاهی (آفتابگردان، کنجد، زیتون و کانولا) و دماهای متفاوت سرخ کردن (150، 170 و 190 درجه سانتیگراد) در مرحله سرخ کردن مقدماتی، بر تغییرات ترکیب تقریبی و فاکتورهای فیزیکی (ویسکوزیته، بازده محصول و چروکیدگی)، رنگسنجی و آنالیز حسی ناگت ماهی تولید شده از کپور نقرهای ((Hypophthalmichthys molitrix بررسی شد. ناگتهای سرخ شده مقدماتی در روغنهای آفتابگردان و کنجد بهترتیب با 89/66 و 67/64 درصد رطوبت بالاتر و با 0/10 و 94/10 درصد جذب روغن کمتری نسبت به نمونههای سرخ شده در روغنهای زیتون و کانولا نشان دادند. ناگتهای سرخ شده مقدماتی در روغن کانولا با مقدار 16/7 pH، بالاترین مقدار pH و ناگتهای سرخ شده در روغن زیتون با مقدار 05/15 آب آزاد، کمترین ظرفیت نگهداری آب را نسبت به سایر تیمارهای سرخ شده در روغنها نشان دادند. مقدار بازده محصول در ناگتهای سرخ شده در روغنهای زیتون و کانولا و در دماهای 170 و 190 درجه سانتیگراد بالاتر بود. مقدار پروتئین و چروکیدگی محصول میان تیمارهای مختلف تفاوت معنیداری نشان نداد. با افزایش دمای سرخ کردن بهترتیب مقدار شاخص روشنایی کاهش و مقدار شاخص قرمزی افزایش یافت. طبق ارزیابی حسی انجام گرفته مقدار شاخصهای حسی رنگ، طعم، بو، احساس چربی در دهان، بافت، آبدار بودن و پذیرش کلی میان تیمارها در روغنها و دماهای متفاوت سرخ کردن مقدماتی یکسان بوده و اختلاف معنیداری نشان ندادند. طبق نتایج حاصل، میان روغنهای سرخکردنی، روغنهای آفتابگردان و کنجد، و میان دماهای مختلف سرخ کردن مقدماتی، دمای 170 درجه سانتیگراد از نظر کلیه شاخصهای اندازهگیری شده نتایج بهتری نسبت به دماهای 150 و 190 درجه سانتیگراد نشان داد.

بهینهسازی تولید پپتیدهای زیستفعال حاصل از هیدرولیز آنزیمی گرده زنبور عسل با آلکالاز و مقایسه با ژله رویال
در این پژوهش تاثیر هیدرولیزآنزیمی پروتئینگردهگل توسط آنزیم آلکالاز بر خواصآنتیاکسیدانی و بازدارندگی آنزیمACE بررسی و با ژلهرویال مقایسهگردید. ترکیبات فنلی، فعالیتمهارکنندگیرادیکالDPPH، قدرت احیاکنندگیگردهگل و ژلهرویال اندازهگیری شد که مقادیر آنها برای غلظت 1000 میلیگرم برلیترگردهگل و ژلهرویال، بهترتیب 174 و 71/1031 میلیگرم اسیدگالیک برگرم نمونه، 33/67% و 27/95% و جذب 8/0 و 77/0 در طول موج 700 نانومتر بود. بیشترین قدرت احیاکنندگی تیمارهای هیدرولیز شده با آنزیم آلکالاز 5/1% و مدت زمان هیدرولیز 5/2 ساعت، 756/0 بود. بیشترین قدرت مهار رادیکال DPPH تیمارهای هیدرولیز شده با آنزیم آلکالاز 1% و مدت زمان هیدرولیز 4 ساعت، 48/78% بود. بیشترین قدرت مهار آنزیم مبدل آنژیوتنسین (ACE) تیمارهای هیدرولیز شده با آنزیم آلکالاز5/1% و مدت زمان هیدرولیز 4 ساعت 07/87% بود. نتایج نشان داد که با انجام عمل هیدرولیز، قدرت مهار رادیکالDPPH و آنزیم ACE گرده گل بهترتیب از 33/67% و 54/15% به 48/78% و 07/87 % ارتقا پیدا کرد. بنابراین بعد از انجام عمل هیدرولیز، قدرت مهار رادیکال و آنزیم ACE گردهگل، از نظر عددی نسبت به ژله رویال افزایش پیداکرد. با توجه به اینکه تنها منبع اصلی پروتئینی زنبور برای تهیه ژله رویال، گرده گل است، میتوان گفت که با هیدرولیز شدن پروتئیینهای گرده گل، تا حدی میتوان آنها را به پپتیدهای موجود در ژله رویال نزدیک کرد.

تاثیرخمیرترش و آنزیم آلفاآمیلاز بر خواص کیفی نان تست
استفاده از برخی افزودنیها نظیر خمیرترش وآنزیمها میتوانند در بهبود کیفیت نانها بسیار موثر واقع شوند. در تحقیق حاضر تاثیر آنزیم آلفاآمیلاز و خمیرترش لاکتیکی بر خواص کیفی نانهای تست مورد بررسی قرار گرفت. سطوح مصرفی شامل 01/0و 03/0 درصد آنزیم آلفاآمیلاز همچنین 4و 6 درصد خمیر ترش لاکتیکی بودند. بررسی نتایج نشان داد که افزودن آنزیم آلفاآمیلاز و خمیرترش لاکتیکی سبب افزایش میزان رطوبت، فیبر، خاکستر وکاهش میزان چربی و پروتئین درنمونههای حاوی افزودنیهای مذکور نسبت به نمونه شاهد میگردد ضمن آنکه افزودن مواد مذکورسبب بهبود ویژگیهای حسی نانهای تولیدی شد بهنحوی که توانست قابلیت جویدن، تناسب شکل، عطر و بو، بافت و رنگ پوسته را نسبت به نمونه شاهد بهبود بخشد و بیاتی حسی و دستگاهی را کاهش دهد. سایر نتایج نیز نشان داد که کاربرد آنزیم آلفاآمیلاز وخمیرترش لاکتیکی بر بهبود ویژگیهای رنگسنجی، حجمسنجی و بافتسنجی نانهای تولیدی در مقایسه با نمونه شاهد تاثیر معنیداری دارد. در نهایت با توجه به نتایج آزمونهای بهعمل آمده ، تیمار M4 که دارای بیشترین مقادیرآنزیم آلفاآمیلاز و خمیرترش لاکتیکی بود بهعنوان بهترین تیمار در تحقیق حاضر معرفی شد.

فعالیت ضدباکتریایی و آنالیز فیزیکوشیمیایی چند نوع عسل با منشاء گیاهی مختلف در استان گلستان
عسل بهعنوان یک ماده غذایی مهم با منشاء طبیعی، پتانسیل بالایی برای فعالیت ضدمیکروبی دارد. منشاء گیاهی عسل در ویژگیهای بیولوژیکی آن بسیار موثر میباشد. لذا این تحقیق بهمنظور بررسی فعالیت ضدباکتریایی و آنالیز فیزیکوشیمیایی چهار نوع عسل شامل آویشن، زول، پونه و شوید جمعآوری شده از کندوهای زنبور عسل در استان گلستان انجام شد. ارزیابی فعالیت ضدباکتریایی علیه چهار باکتری شامل استافیلوکوکوس اورئوس، اشریشیا کلی، باسیلوس سرئوس و شیگلا دیسانتری بر اساس انتشار در آگار و با روش چاهک انجام شد. کمترین غلظت مهارکنندگی و کمترین غلظت باکتریکشی نمونههای عسل به وسیله روش ماکرودایلوشن تعیین شد. همچنین ویژگیهای فیزیکوشیمیایی شامل رطوبت، pH، اسیدیته، محتوای خاکستر و قندهای احیاءکننده برای نمونههای عسل، مورد مطالعه قرار گرفت. نتایج حاکی از بیشترین فعالیت ضدباکتریایی برای عسل زول بهترتیب با قطر هاله عدم رشد 5/15، 14و 11 میلیمتر علیه شیگلا دیسانتری، استافیلوکوکوس اورئوس ، باسیلوس سرئوس و اشریشیا کلی در غلظت 50 درصد حجمی/ حجمی می باشد. سطوح MIC وMBC بهدست آمده برای عسلهای مورد آزمون در محدوده 50 -25/6 درصد حجمی/ حجمی بوده و عسل پونه کمترین فعالیت ضدباکتریایی را نشان داد. بهطور کلی نتایج این تحقیق دلالت بر این دارد که فعالیت ضدباکتریایی نمونههای عسل با توجه به منشاء گل عسل متغیر است.

بررسی شرایط تولید و خشککردن شیر موز به روش کف پوشی با مایکرویو و بررسی خصوصیات پودر
نوشیدنیهای میوهای بخشی از رژیم غذایی انسان را در بسیاری از مناطق جهان تشکیل میدهند. در این میان شیرموز طرفداران زیادی را به خود اختصاص داده است. استفاده از تکنولوژیهای نوین نظیر استفاده از روش کفپوشی و خشک کردن با مایکرویو برای کاهش میزان صدمات خشک کردن استفاده میشود. از این رو در پژوهش حاضر، شرایط بهینهیابی تولید کف شیر موز به روش رویه سطح پاسخ بر مبنای سه متغیر سرعت گاز نیتروژن (2 -2/0 لیتر بر دقیقه)، میزان صمغ گزانتان (25/0 -15/0 درصد) و نسبت شیر به موز (1-6 و 1-3) بررسی گردید. همچنین تأثیر سه ولتاژ متفاوت دستگاه مایکرویو (360، 660 و 900 ولت) و دو ضخامت 3 و 5 میلیمتر بر روی نمونه بهینه ارزیابی شد. براساس نتایج مشخص گردید نمونه تحت تأثیر گاز نیتروژن با سرعت 2/0 لیتر بر دقیقه، 22/0 درصد صمغ گزانتان و 3 درصد موز دارای کمترین دانسیته و بیشترین پایداری بود. از این رو تیمار فوق بهعنوان نمونه بهینه انتخاب گردید و با انرژی مایکروویو خشک شد. نتایج این بخش به وضوح نشان داد نمونه خشک شده با ضخامت 3 میلیمتر تحت ولتاژ 900 ولت دارای بالاترین میزان روشنایی L* و بالاترین دمای گذار شیشهای و کمترین میزان رطوبت بود.

بررسی اثرات آنتیاکسیدانی عصاره معمولی و انکپسوله گیاه اسفرزه (Plantago ovate) بر پایداری اکسیداتیو سیستم مدل غذایی (روغن آفتابگردان)
رادیکالهای آزاد باعث ایجاد بیماریهای زیادی در انسان میشوند. آنتیاکسیدانهای فنولی قادر به جلوگیری از تأثیر مخرب رادیکالهای آزاد و جهشهای حاصل بر ساختارهای سلولی میباشد. این مطالعه فعالیت آنتیاکسیدانی عصاره گیاه اسفرزه و تأثیرات این آنتیاکسیدان طبیعی را بر پایداری اکسیداتیو روغن آفتابگردان بررسی میکند. در این مطالعه سنجش محتوی فنولی عصاره گیاه اسفرزه بهوسیله آزمون فولین- سیوکالتو و فعالیت آنتیاکسیدانی آن توسط دو آزمون DPPH و قدرت احیاءکنندگی آهن مورد بررسی قرار گرفت. همچنین سنجش عدد پر اکسید و شاخص تیوباربیوتیک اسید بر روغن آفتابگردان با آزمون آونگذاری در دمای 70 درجه سانتیگراد انجام شد. نتایج این آزمایش نشان دادند که غلظتهای مختلفی از این عصاره قادرند تا حد زیادی روند اکسیداسیون را در 65 درجه سانتیگراد کند نمایند. در بین تیمارها، غلظت 1000 پیپیام انکپسوله گیاه اسفرزه در طول زمان نگهداری دارای فعالیت آنتیاکسیدانی بالاتری نسبت به سایر تیمارها بود (05/0>p). نتایج نشان داد که عصارههای معمولی و انکپسوله اسفرزه دارای اثر آنتیاکسیدانی خوبی میباشد و میتواند بهعنوان یک آنتیاکسیدان طبیعی در دسترس صنایع غذایی و دارویی قرار گیرد.

اثر پوششهای خوراکی چیتوزان، آلژینات سدیم و کنسانتره پروتئین آب پنیر بر ماندگاری زردآلوی رقم رجبعلی
زردآلو، میوهای است نرم که معمولا مقاومتی در برابر ضربه و شرایط نامناسب حمل ونقل و نگهداری ندارد و در نتیجه امکان صادرات این محصول باکیفیت خوب و ضایعات کم وجود ندارد یا بسیارمحدود است .این تحقیق با هدف مطالعه تغییرات کمی وکیفی درفرآیند رسیدگی و نگهداری میوه زردآلو با استفاده ازپوششهای چیتوزان، آلژینات سدیم و کنسانتره پروتئین آب پنیر با درصدهای متفاوت صورت گرفت. میوه رقم رجبعلی برداشت و پس از غوطهوری در محلولهای پوششدهند، به مدت 35 روز در دمای 2 درجه سانتیگراد نگهداری شده و در زمان صفر و 35 روز پس از برداشت برخی خصوصیات کمی وکیفی میوه مانند افت وزن، اسیدیته، بار میکروبی، رنگ، بافت، چروکیدگی، قهوهای شدن و ویتامین ث مورد ارزیابی قرارگرفت. نتایج حاصل از تجزیه تحلیل دادهها با استفاده از طرح مرکب مرکزی (CCD) نشان داد غلظت پروتئین آب پنیر اثر معناداری بر کاهش وزن درطول نگهداری نداشت و چیتوزان و آلژینات سدیم نقش مهمی در حفظ سفتی بافت داشتند. افزایش غلظت چیتوزان و کاهش آلژینات سدیم سبب افزایش b* (رنگ زرد) و L* (روشنایی) شد. همچنین افزایش آلژینات وکاهش چیتوزان، سبب حفظ بهتر اسیدیته میوه درپایان دوره نگهداری گردید. در مورد قهوهای شدن نیز نشان داده شد که با افزایش غلظت چیتوزان تا حدود یک درصد بر میزان قهوهای شدن زردآلوهای پوشش داده شده افزوده شد. چروکیدگی زردآلوها با افزایش غلظت آلژینات سدیم، در غلظتهای پایین پروتئین آب پنیر افزایش و در غلظتهای بالای پروتئین آب پنیر، کاهش یافت. علاوه بر این نشان داده شد که با افزایش غلظت چیتوزان بارمیکروبی کاهش مییابد. با توجه به بهینهسازی انجام شده توسط نرمافزار Design expert، مشخص گردید که بهترین فرمولاسیون پوشش خوراکی برای زردآلو شامل 25/1درصد آلژینات، 45/1 درصد چیتوزان و صفر درصد پروتئین آب پنیر میباشد.

اثر غلظتهای مختلف مالتودکسترین و دماهای مختلف خشککردن پاششی بر ویژگیهای پودر عصاره ریزپوشانی شده سماق
هدف از این مطالعه، بررسی تأثیر دمای هوای ورودی و غلظتهای مختلف مالتودکسترین افزوده شده در خشککردن پاششی عصاره آبی سماق بر برخی ویژگیهای پودر تولیدی بود. سماق یکی از ادویههای رایج مورد استفاده مردم است. به دلیل مشکلات میکروبی ناشی از نگهداری ادویهها و نیز کاهش کیفیت ترکیبات عطر و طعمی و رنگی آنها در طی نگهداری، ریزپوشانی ترکیبات زیست فعال موجود در عصاره ادویهها راهکار مناسبی است که توسط پژوهشگران پیشنهاد شده است. خشککردن پاششی از رایجترین و اقتصادیترین روشهای ریزپوشانی است. در این پژوهش از سه دمای هوای ورودی (°C180 ،160 ،140)، سه غلظت مالتودکسترین (10، 20 و30 درصد) در خشککن پاششی پایلوت برای تولید پودر عصاره سماق استفاده گردید. جریان هوا بهصورت همسو با خوراک ورودی بود و دمای هوای خروجی بر روی C°80 تنظیم شد. آزمونها شامل ارزیابی بازده تولید پودر، رطوبت، فعالیت آبی، انحلالپذیری، میزان جذب رطوبت، نمپذیری و شاخصهای رنگی پودر عصاره سماق بود. نتایج نشان داد که با افزایش دمای هوای ورودی خشککن و نیز افزایش غلظت مالتودکسترین، بازده تولید پودر، پارامتر رنگی روشنایی و توانایی نمپذیری پودرها افزایش یافت. از طرف دیگر مقدار رطوبت، فعالیت آبی، انحلالپذیری، خاصیت جذب رطوبت و پارامترهای رنگی کروما، a* و b* پودر ارتباط معکوسی با دمای هوای ورودی و غلظت مالتودکسترین داشتند. همچنین در این پژوهش مشخص گردید که دمای هوای ورودی بهعنوان پارامتر اصلی فرایند خشک کردن پاششی بهطور معنیداری (p

بررسی کاربرد امولسیفایرهای ژلی برای کاهش اسیدیته چربی در کیک لایه ای
یکی از مشکلات رایج در تولید کیک، اسیدیته چربی بالای آن است. زرده تخممرغ بهدلیل داشتن اسیدهای چرب آزاد و لستین عامل احتمالی اسیدیته بالا در این کیکها است. علاوه بر این، تخممرغ به علت داشتن کلسترول بالا احتمال ابتلاء به بیماریهای قلبی و عروقی را افزایش میدهد. لذا هدف این پژوهش بررسی جایگزینی زرده تخممرغ با سه نوع امولسیفایر ژلی تجارتی با خواص متفاوت بود. سه نوع امولسیفایر ژلی تجاری با زرده تخممرغ جایگزین شد. در تیمارهای دیگر فقط از سفیده و زرده تخممرغ استفاده شد تا تأثیر هر بخش تخممرغ جداگانه بررسی شود. خواص فیزیکی خمیر و ویژگیهای فیزیکی شیمیایی و بافتی کیک مورد بررسی قرار گرفت. اسیدیته چربی و میزان پراکسید کیک اندازه گیری شد. یافتهها حاکی از آن بود که کیکهای تهیه شده با هر سه نوع امولسیفایر ژلی که در فرمولاسیون آنها فقط از سفیده استفاده شده بود، نسبت به نمونههایی که دارای زرده تخممرغ بودند، اسیدیته چربی و عدد پراکسید پایینی داشتند. در ضمن این کیکها از لحاظ خواص ارگانولپتیکی دارای بافت نرمتر و عطر و طعم مطلوبتری نسبت به سایر تیمارها بودند. در طول زمان نیز اسیدیته چربی، خواص بیاتی و میزان سفتی ارزیابی شد. اسیدیته چربی روند تقریباً ثابتی را نشان داد و کیکهای حاوی امولسیفایر ژلی بافت نرم خود را در تمام طول مدت ماندگاری حفظ کردند. در نهایت، میتوان با جایگزینی امولسیفایرهای ژلی تجاری با زرده تخممرغ اسیدیته چربی در کیک را کنترل نموده و در عین حال کیک فاقد کلسترول تولید نمود.

تهیه فیلمهای آنتیلیستریایی متیلسلولز، کازئینات سدیم و باکتری لاکتوباسیلوس کازئی 1608 PTCC
در این تحقیق سعی گردید تا با استفاده از بیوپلیمرهای کازئینات سدیم و متیل سلولز فیلم مناسب جهت کنترل رشد باکتری لیستریا اینوکوا 10799IBRC-M تهیه گردد. بدین منظور باکتری لاکتوباسیلوس کازئی 1608 PTCCبه تعداد CFU/cm2106 مستقیما به محلول سازنده فیلمهای کازئینات سدیم و متیل سلولز افزوده، سپس در دمای 25 درجه سانتیگراد و مدت 24 ساعت خشک شدند. تاثیر باکتری لاکتوباسیلوس کازئی 1608PTCC بر خصوصیات فیلم شامل نفوذپذیری بخار آب، کدورت و مکانیکی ارزیابی شد. همچنین اثر مهارکنندگی فیلمها بر باکتریهای لیستریا اینوکوا 10799IBRC-M و نرخ زندهمانی لاکتوباسیلوس کازئی 1608PTCC طی 12 روز (در دمای 5 درجه سانتیگراد) بررسی گردید. ارزیابیهای آزمایشگاهی نشان داد حضور باکتری اسید لاکتیک در فیلمها بهطور معنیداری سبب افزایش شفافیت، نفوذپذیری بخارآب و مقدار کششپذیری و همچنین کاهش معنیدار مقاومت کششی و مدول الاستیسیته شد. نرخ زندهمانی لاکتوباسیلوس کازئی 1608PTCC در فیلم سدیم کازئینات بهطور معنیداری بالاتر بود. بیشترین و کمترین مقدار نرخ بازداری لیستریا اینوکوا 10799IBRC-M در فیلم متیل سلولز بهترتیب در روزهای چهارم (86%) و دوازدهم (27 %) مشاهده گردید (05/0>p) . اما از روز هشتم به بعد فیلم زیستفعال کازئینات سدیم توانایی مهار بالاتری نشان داد. نتایج این تحقیق نشان داد نوع پلیمر نقش کلیدی در خواص ضد باکتریایی و فیزیکی فیلم زیست فعال دارد.

اثر هم افزایی صمغ های دانه ریحان و کتیرا بر ویژگیهای کیفی نان بربری نیمپز منجمد
با آگاهی از مضرات افزودنیهای شیمیایی تمایل برای مصرف افزودنیهای طبیعی افزایش یافته است. این پژوهش با هدف معرفی صمغهای بومی ایران بهعنوان یک افزودنی طبیعی در بهبود کیفیت نان بربری نیمپز منجمد انجام شد. صمغ ریحان و کتیرا هر کدام در سه سطح (صفر، 3/0 و 5/0 درصد) در در فرمولاسیون نان استفاده شد. بدین منظور نان بربری بهصورت نیمپز تهیه و به مدت 15 روز در در دمای ċ18- سانتیگراد نگهداری شد. پس از رفع انجماد و پخت نهایی آزمونهای کیفی، حسی و بافتسنجی انجام گردید. نتایج نشان داد که استفاده همزمان از صمغ ریحان در سطح 5/0 و کتیرا در سطح 3/0 درصد سبب بهبود حجم مخصوص، تخلخل و خصوصیات حسی و کاهش سفتی شدند.

اثرات فیلم کامپوزیتی خوراکی نشاسته- کیتوزان حاوی ترکیب عصاره پوست انار و اسانس روغنی کاکوتی بر ماندگاری گوشت قرمز در زمان نگهداری
هدف از این تحقیق وارد نمودن دو ماده با خواص آنتیاکسیدانی و ضدمیکروبی مناسب در قالب فیلم کامپوزیتی نشاسته– کیتوزان و ارزیابی اثرات آن بر ماندگاری گوشت قرمز میباشد. بعد از تهیه اسانس روغنی و عصاره، فیلم کامپوزیتی به روش کستینگ تهیه گردید. نمونه مدل غذایی (گوشت) با فیلم تهیه شده پوشش داده شد و اثرات آن شامل تغییرات جمعیت باکتریهای مزوفیل هوازی، اسید لاکتیک و سودوموناس، تغییرات شیمیایی شامل pH و اکسیداسیون چربی و نیز خصوصیات حسی در طول نگهداری 21 روز بررسی گردید. نتایج نشان داد که در پایان 21 روز در جمعیت باکتریهای مزوفیل هوازی 11/7 سیکل لگاریتمی کاهش در مقایسه با گروه بدون پوشش مشاهده شد. در جمعیت باکتریهای اسید لاکتیک نیز بهترین اثر مربوط به فیلم حاوی اسانس2 درصد و عصاره نیمدرصد بود که نسبت به گروه کنترل 29/3 سیکل لگاریتمی اختلاف داشت. از طرفی در نمونه پوشش داده شده توسط فیلم حاوی 2 درصد اسانس و 1 درصد عصاره در پایان روز 21 ام، 92/6 سیکل لگاریتمی کاهش در جمعیت باکتری سودوموناس در مقایسه با گروه کنترل بدون پوشش مشاهده شد. تیمارهای حاوی عصاره نیم و یک درصد بیشترین ممانعت را از تشکیل مالون آلدهید داشته و بیشترین میزان اکسیداسیون نیز در نمونه بدون پوشش و کنترل بدون عصاره مشاهده گردید. در حالی که بقیه تیمارها بهخصوص حاوی عصاره پوست انار، در طول نگهداری 22 روز از یک روند اکسیداسیون کند برخوردار بودند. این مطالعه نشان داد که فیلم کامپوزیتی حاوی عصاره و اسانس دارای خواص ضدمیکروبی و آنتیاکسیدانی بالایی بوده و با بهبود برخی ویژگیهای فیزیکی فیلم میتواند برای بستهبندی و نیز افزایش عمر نگهداری گوشت مورد استفاده قرار گیرد.

مدلسازی تبدیل جزء برای تغیییرات رنگ سیب در فرآیند همزمان آنزیمبری خشک و آبزدایی با روش پرتودهی متناوب مادون قرمز
پرتودهی متناوب روش فرآوری نوینی در صنایع غذایی است که طی آن دمای سطحی محصول ثابت نگه داشته میشود. در این پژوهش، سینتیک تغییرات رنگ برشهای سیب با هدف حفظ کیفیت ظاهری طی فرآیند آنزیمبری خشک و آبزدایی همزمان با پرتودهی متناوب مادون قرمز، بررسی شد. بدین منظور، برشهای سیب (واریته زرد لبنانی) در سه ضخامت 5، 9 و 13 میلیمتر در سه دمای سطحی ثابت محصول 70، 75 و °C80 خشک شدند. پارامترهای روشنایی (L)، قرمزی (a)، زردی (b)، شدت تغییرات رنگ (∆E)، کروما (Cr) و اندیس قهوهای شدن (BI) با استفاده از مدل تبدیل جزء، طی فرآوری محصول توصیف شدند. مقدار تعادلی شاخصهای رنگی (Cf) به عنوان شاخصی جهت مقایسه شرایط مختلف فرآروی استفاده گردید. نتایج نشان داد که کنترل دمای سطحی محصول و ضخامت در جلوگیری از تیرگی محصول طی آنزیمبری و آبزدایی موثر است. در واقع، رنگ مطلوب محصول (روشنایی بیشتر، قرمزی کمتر و زردی بیشتر) با کاهش دما و افزایش ضخامت مشاهده شد. اگرچه ضخامت محصول روی فاکتور زردی تاثیر معکوس و اندکی نشان داد (583/62 و 491/57 به ترتیب برای ضخامت 5 و 13 میلیمتر در دمای °C70). شدت تیرگی رنگ وابستگی زیادی به ضخامت محصول داشت.کاهش دمای سطحی موجب کاهش غیرمعنیدار اندیس قهوهایشدن گردید (761/104، 482/108 و 99/162بهترتیب برای دمای 70، 75 و °C80 در ضخامت 5 میلیمتر). این امر نشاندهنده این واقعیت است که عملیات همزمان آنزیمبری خشک و آبزدایی با دمای سطحی ثابت محصول میتواند از وقوع واکنشهای نامطلوب تیرگی رنگ جلوگیری نماید.

اثر فرمولاسیون نانولیپوزوم های مختلف بر درون پوشانی و پایداری کورکومین
کورکومین مادهای هیدروفوب است که به علت ناپایداری در شرایط فیزیولوژیکی و جذب پایین، به سرعت از بدن دفع شده و دسترسی زیستی پایینی دارد. در این پژوهش بهمنظور تثبیت ساختار فسفولیپید، حفاظت از لیپوزومها و بهبود پایداری کورکومین در شرایط رودهای از فرمولاسیونهای حاوی فسفولیپید (S75 و P90G)، سدیم هیالورونات و اودراجیت (S100 و L100) استفاده شد. نتایج نشان داد که P90G در مقایسه با S75 لیپوزوم-هایی بسیار کوچک (10±130 نانومتر) با شاخص پراکندگی پایین (03/0±17/0) ایجاد کرد در حالی که افزودن هیالورونان و اودراجیت به افزایش معنی-دار این مقادیر منجر گردید. لیپوزومهای حاوی اودراجیت، دارای اشکال کروی و بیضی شکل چند لایه یا تک لایه بزرگ با میانگین اندازه 400-300 نانومتر بودند، طوریکه برخی از آنها، تعدادی وزیکول کوچکتر را در درون خود محبوس کرده بودند. لیپوزومهای تولید شده با هر دو نوع اودراجیت، بازده درونپوشانی بالا (بیش از 80 درصد) بلافاصله پس از تولید داشتند، به علاوه در این نمونهها حین نگهداری کاهش معنیداری نیز مشاهده نگردید. لیپوزومهای حاوی اودراجیت S100 دارای اندازه کوچکتری (31±287 نانومتر) در مقایسه با نمونه حاوی اودراجیت L100 (33±407 نانومتر) بلافاصله پس از تولید بوده، به علاوه پایداری خود را حین نگهداری حفظ کرد. تثبیت لیپوزومها در شبکه پلیمری هیالورونان- اودراجیت منجر به افزایش پایداری آنها در برابر شرایط سخت گوارشی مانند قدرت یونی و تغییرات pH شد؛ بدین ترتیب لیپوزومهای حاوی اودراجیت S100 با داشتن فاکتورهای ابعادی مناسب و پایداری مطلوب جهت بارگذاری و انتقال مقادیر بالای کورکومین انتخاب گردید.

تأثیر گلوتن فعال و آنزیم همیسلولاز بر بهبود کیفیت کیک یزدی غنی شده با آرد عدس جوانهزده
عدس جوانهزده ترکیبی سرشار از ریزمغذیهای فراوان است. هدف از این پژوهش، غنیسازی طبیعی کیک یزدی با آرد عدس جوانهزده و بهبود ویژگیهای کیفی آن با استفاده از گلوتن فعال و آنزیم همیسلولاز است. در این راستا پس از ارزیابی ویژگیهای شیمیایی آرد گندم و آرد عدس جوانهزده، کیک تهیه شده با 25درصد جایگزینی آرد گندم با آرد جوانه عدس به همراه آنزیم همیسلولاز (صفر، 25 و 50 قسمت در میلیون) و گلوتن فعال (صفر، 5/1 و 3 درصد) از لحاظ حجم، دانسیته ظاهری، رنگ پوسته و مغز، رطوبت، خواص بافتی و حسی مورد بررسی قرار گرفت. نمونه بهینه حاصل از نظر بیاتی، کمیت چربی، پروتئین، خاکستر، فیبرخام و املاح آهن، کلسیم، فسفر و پتاسیم مورد بررسی قرار گرفت و با شاهد مقایسه گردید. نتایج نشان داد که افزودن آرد جوانه عدس به کیک باعث افزایش رطوبت محصول نسبت به نمونه شاهد شد. افزودن گلوتن و آنزیم همیسلولاز تأثیر معنیداری (P≤0.05) بر کاهش دانسیته ظاهری و بهبود ویژگیهای ظاهری، حسی و بافتی کیک گذاشت. طوریکه سختی بافت کاهش و پیوستگی و فنریت آن افزایش یافت. فرمولاسیون بهینه بر مبنی آنالیزهای فیزیکی، بافتی و حسی، نمونه دارای 25درصد آرد جوانه عدس، 3درصد گلوتن فعال و ppm50 آنزیم همیسلولاز تعیین شد. مقایسه خصوصیات بافتی دو نمونه بهینه و شاهد نشان از ارزش بالاتر فرآورده تولید شده از لحاظ محتوی پروتئین، خاکستر، فیبر خام و املاح آهن، کلسیم، پتاسیم و فسفر در مقایسه با نمونه شاهد و مشابهت کیفیت بافتی آنها داشت.
همی سلولاز معرفی گردیدد. مقایسه خصوصیات بافتی دو نمونه بهینه و شاهد (تهیه شده با آرد گندم بدون افزودنی ها) نشان از قرابت این دو نمونه دارد و ارزش بالاتری فرآورده تولید شده از لحاظ محتوی پروتئین، خاکستر، فیبر خام و املاح آهن، کلسیم، پتاسیم و فسفر در مقایسه با نمونه شاهد دارد.

مطالعه عوامل مؤثر بر خصوصیات فیزیکوشیمیایی و حرارتی پودر خرمای کبکاب: بهینهسازی تأثیر دما و ترکیبات ضدچسبندگی
یکی از محصولات جانبی خرما، پودر خرما میباشد که کاربردهای متعددی در صنایع غذایی دارد. مشکل اصلی پودر میوهها چسبندگی طی خشک کردن، انتقال و نگهداری پودر است. برای جلوگیری از چسبندگی و کلوخه ای شدن پودر خرما، مالتودکسترین در سه غلظت (35، 45 و 55%) بهعنوان ماده کمکی در خشک کردن و سیلیکون دی اکسید در سه غلظت (صفر، 75/0 و 5/1%) بهعنوان ماده ضدکلوخه شدن به خمیر خرما قبل از خشک شدن اضافه شد. نمونهها در سه دمای 50، 60 و70 درجه سانتیگراد خشک شدند. خواص فیزیکوشیمیایی و حرارتی پودر خرما شامل رطوبت، دانسیته توده، گرمای ویژه و دمای انتقال شیشهای اندازهگیری شدند. نتایج نشان داد که افزایش غلظت مالتودکسترین سبب افزایش پارامترهای دانسیته، L* و دمای تغییر شیشهای گردید ولی رطوبت پودر، مقدار a* و گرمای ویژه کاهش یافت. افزایش میزان سیلیکون دی اکسید سبب افزایش رطوبت، دانسیته و کاهش L* گردید. اثرات متقابل دما و مالتودکسترین و نیز دما و سیلیکون دی اکسید سبب کاهش رطوبت خرما، افزایش دانسیته، کاهش L* و a* و افزایش b* گردید. ترموگرامهای پودر خرما نشان دهنده وجود ساختمان نیمه بلوری در پودر خرما بود. براساس نتایج، بهترین شرایط برای تهیه پودر خرما دمای ℃70، 55% مالتو دکسترین و 75/0% سیلیکون دی اکسید بود.

تاثیر پریبیوتیکهای اینولین و نشاسته مقاوم بر خواص رئولوژیکی خمیر نان باگت
نان بهعنوان یک ماده غذایی از اهمیت ویژهای برخوردار است و افزودن برخی پریبیوتیکها نظیر اینولین و نشاسته مقاوم به آن میتواند سبب بهبود ارتقا سلامت افراد گردد. در پژوهش حاضر، تاثیر پریبیوتیکهای اینولین و نشاسته مقاوم بر خواص رئولوژیکی خمیر مورد بررسی قرار گرفتند. در این راستا از سطوح 5/2 و 5 درصد اینولین و نشاسته مقاوم استفاده گردید. با توجه به نتایج، در آزمونهای فارینوگراف خمیر، مقدار جذب آب، زمان گسترش خمیر، زمان پایداری خمیر، افزایش و درجه نرم شدن خمیر پس از 10 و 12 دقیقه کاهش یافت. همچنین بر اساس نتایج حاصل از آزمون اکستنسوگراف، میزان انرژی خمیر، مقاومت به کشش خمیر، عدد نسبت خمیر، افزایش ولی قابلیت کشش آن کاهش نشان داد. در مجموع با لحاظ نمودن نتایج حاصل از کلیه آزمایش ها، تیمار ترکیبی D8 (حاوی 5 درصد اینولین و 5 درصد نشاسته مقاوم) بهعنوان بهترین تیمار معرفی گردید.
