چکیده

هدف از این پژوهش استخراج ترکیبات فنلی برگ گردو واریته تویسرکانی، به دو روش سنتی و به کمک امواج مایکروویو و بررسی فعالیت آنتی‌اکسیدانی ترکیبات حاصله بود. ویژگی های آنتی اکسیدانی و مقدار فنول کل عصاره های آبی، اتانولی (50 درصد)، متانولی (80 درصد) طی زمان های مختلف تعیین و در ادامه تاثیر عصاره متانولی در ممانعت از اکسایش روغن سویا بررسی شد. همه عصاره‌ها، خواص آنتی اکسیدانی وابسته به غلظت را نشان دادند. بیشترین مقدار فنول کل (25/0 ± 15/89 میلی گرم معادل اسید گالیک بر گرم عصاره خشک) مربوط به عصاره متانولی حاصل از استخراج به کمک امواج مایکروویو بود. عصاره اتانولی بالاترین قدرت مهار رادیکال آزاد (µgr/ml90/27 EC50=)، قدرت احیاکنندگی (µgr/ml26/93EC50= ) و ظرفیت آنتی اکسیدانی کل (µgr/ml 23/68 EC50=) را دارا بود. همچنین عصاره متانولی در غلظت 1000 پی پی ام به خوبی قادر بود اکسایش روغن کنترل کند و این عصاره موثرتر از BHA و BHT در همه غلظت ها (غیر از اینکه BHT در غلظت 200 عدد پراکسید بهتری از این عصاره نشان داد اما در عین حال عدد تیوباربیتوریک عصاره بهتر بوده است) اکسایش را به تأخیرانداخت. با توجه به نتایج حاصل از این پژوهش می‌توان برگ گردو واریته تویسرکانی را به عنوان منبع بالقوه‌ای از ترکیبات فنلی و آنتی اکسیدان های طبیعی معرفی نمود.
