چکیده

در این تحقیق پروتئین‌های ایزوله سویا با دکستران از طریق واکنش طبیعی مایلارد کانژوگه شد. الگوی الکتروفورز نشان داد کانژوگه‌های پروتئین-پلی ساکارید شکل گرفته‌اند. اندازه‌گیری شدت قهوه‌ای شدن و میزان جذب UV نتایج الکتروفورز را تأیید کرد. بررسی خصوصیات عملکردی پروتئین‌های نشان داد که پایداری حرارتی، حلالیت و خصوصیات امولسیفایری پروتئین‌های سویا با کانژوگه شدن بهبود یافته است. پایداری نوشیدنی سویای تولید شده با پروتئین‌های کونژوگه در مقابل فرایند حرارتی و در طول زمان نگهداری در مقایسه با نوشیدنی سویای تهیه شده بر پایه پروتئین‌های غیرکونژوگه افزایش یافت. در مجموع می‌توان نتیجه‌گیری کرد که امکان استفاده از واکنش مایلارد به‌عنوان راهی برای تهیه کانژوگه‌های پروتئین‌های سویا-دکستران با خصوصیات عملکردی و پایداری بهتر وجود دارد.
