چکیده

ریزپوشانی مواد غذا-دارو در حامل های لیپیدی، از جمله لیپوزوم ها، منجر به افزایش قابلیت زیست‌فراهمی مواد فعال، رهایش کنترل‌شده و دقیق آن‌ها، حفظ پایداری آن‌ها در برابر شرایط مختلف محیطی و حلالیت مواد فعال آبگریز در محیط آبی می‌شود. از جمله ترکیبات مغذی آبگریز با خاصیت آنتی‌اکسیدانی و پروویتامینی مفید، بتاکاروتن می‌باشد که خاصیت آبگریزی این ماده و نیز حساسیت بالا در شرایط مختلف محیطی کاربرد آن را برای غنی‌سازی مواد غذایی محدود کرده است. هدف از انجام این پژوهش تولید و بررسی نانولیپوزوم‌های حامل بتاکاروتن به روش گرمایی اصلاح‌یافته (مظفری اصلاح‌شده) و بررسی ویژگی‌های مهم کاربردی آن بود. اندازه ذرات نانولیپوزوم‌های حامل بتاکاروتن در غلظت‌های مختلف لستین، کوچک‌تر از 500 نانومتر به‌دست آمد و برای غلظت‌های بهینه لستین، 84-64 نانومتر تعیین شد. استفاده از فیتواسترول (گامااوریزانول)، جهت حفظ پایداری غشای سیستم‌های لیپوزومی، موجب کاهش اندازه ذرات در غلظت‌های مختلف لستین گردید. به‌طور مثال در غلظت 200 میلی‌گرم لستین اندازه ذرات از 88 نانومتر به 64 نانومتر کاهش یافت. همچنین گامااوریزانولِ مورداستفاده در لیپوزوم، روی کارایی ریزپوشانیِ بتاکاروتن مؤثر نبود و در هر دو سیستم کارایی حدود 89 درصد محاسبه شد. پایداری لیپوزوم‌های بدون گاما اوریزانول و حاوی آن، بر اساس پتانسیل زتا که معیاری برای دافعه الکترواستاتیک و پایداری است، مناسب به‌دست آمد.
