چکیده

با آگاهی از مضرات افزودنی‏های شیمیایی تمایل برای مصرف افزودنی‏های طبیعی افزایش یافته است. این پژوهش با هدف معرفی صمغ‏های بومی ایران به‌عنوان یک افزودنی طبیعی در بهبود کیفیت نان بربری نیم‌پز منجمد انجام شد. صمغ ریحان و کتیرا هر کدام در سه سطح (صفر، 3/0 و 5/0 درصد) در در فرمولاسیون نان استفاده شد. بدین منظور نان بربری به‏صورت نیم‏پز تهیه و به مدت 15 روز در در دمای ċ18- سانتی‌گراد نگهداری شد. پس از رفع انجماد و پخت نهایی آزمون‏های کیفی، حسی و بافت‌سنجی انجام گردید. نتایج نشان داد که استفاده همزمان از صمغ ریحان در سطح 5/0 و کتیرا در سطح 3/0 درصد سبب بهبود حجم مخصوص، تخلخل و خصوصیات حسی و کاهش سفتی شدند.
