چکیده

استفاده از ترکیبات طبیعی جهت حفظ سلامتی انسان و امنیت غذایی، به‌عنوان نگهدارنده ﻣﺤﺼﻮﻻت غذایی روبه گسترش اﺳﺖ. هدف از انجام پژوهش حاضر بررسی امکان استفاده از پوشش پوترسین در چهار سطح (صفر و 2، 4، 6 میلی­مولار)، ژل آلوئه‌ورا در چهار سطح (صفر، 15، 30 و 45 درصد) و تاثیر زمان نگهداری (15، 30 و 45 روز) برای میوه هلو بوده است. پس از پوشش‌دهی میوه­ها در دمای ۱- درجه سانتی­گراد و رطوبت ۹۵-۹۰٪، در سردخانه نگهداری شدند. اندازه‌گیری شاخص‌های ﻣﯿﺰان ویتامین ث، ﻣﻮاد ﺟﺎﻣﺪ ﻣﺤﻠﻮل، اسیدیته کل، ﻓﻨﻞ ﮐﻞ، کاروتنوئیدها و فلاونوئیدها، صورت گرفت. بر اساس جدول تجزیه واریانس، اثرات سه­گانه تیمارها در تمامی شاخص­ها در سطح احتمال 1% معنی­دار بودند. نتایج نشان­دادند که در صفات اسیدیته کل (۸۴/۰ درصد) و فلاونوئیدها (۲۳/۵۰ میلی‌گرم در یک گرم وزن تر) بیش­ترین مقدار در پوشش ترکیبی پوترسین ۶ میلی­مولار و آلوئه­ورا ۱۵% به­دست آمد. مواد جامد محلول بیشتر در پوشش ترکیبی پوترسین ۲ میلی­مولار و آلوئه­ورا ۴۵% مشاهده شد (۱۸/۱۵ درصد بریکس). بیش­ترین مقدار ویتامین ث (۸۹/۱۰ میلی­گرم اسید آسکوربیک در ۱۰۰ گرم نمونه در 15 روز اول) و کاروتنوئیدها (۸۶/۹۴ میلی­گرم بر گرم وزن تر نمونه) در پوشش ترکیبی پوترسین ۶ میلی­مولار و آلوئه­ورا ۳۰% حاصل شد.
