چکیده

هدف از این پژوهش بررسی نقش اندازه ذرات آرد سوخاری و اثر افزودن ایزوله پروتئین سویا به آرد سوخاری و خمیرآبه بر ویژگی‌های ناگت مرغ بود. آرد سوخاری در سه اندازه ریز، متوسط و درشت تهیه شد. سپس 3 درصد ایزوله پروتئین سویا به‌طور جداگانه یک بار به آرد سوخاری با اندازه ذرات متفاوت و یک بار به خمیرآبه افزوده شد و در تهیه ناگت مورداستفاده قرار گرفت. درنهایت، مقدار جذب آرد سوخاری، میزان رطوبت، افت پخت، تخلخل، جذب روغن، رنگ و ویژگی‌های بافتی ناگت‌های مرغ موردارزیابی قرار گرفت. براساس نتایج به‌دست‌آمده ناگت‌های مرغ پوشش‌داده‌شده با ذرات آرد سوخاری ریز، بیشترین محتوی رطوبت و کمترین تخلخل و جذب روغن را داشتند. استفاده از ایزوله پروتئین سویا در خمیرآبه تغییرات قابل‌توجهی در خصوصیات بافتی ایجاد کرد اما تأثیر معنی‌داری بر رنگ نداشت. این در حالی است که افزودن ایزوله پروتئین سویا به آرد سوخاری اثر معنی‌دار بیشتری در نگهداری رطوبت و کاهش افت پخت، تخلخل و جذب روغن نشان داد. همچنین براساس نتایج به‌دست‌آمده افزودن ایزوله پروتئین سویا به آرد سوخاری تأثیر معنی‌داری در کاهش جذب روغن و بهبود ویژگی‌های ناگت مرغ نسبت به افزودن این ترکیب به خمیرآبه داشت. به‌طورکلی استفاده از آرد سوخاری ریز که دارای 3 درصد ایزوله پروتئین سویا است ‌‌‌‌می‌تواند نقش قابل‌توجهی در بهبود ویژگی‌‌‌‌‌های کیفی و تغذیه‌‌‌‌‌‌ای ناگت مرغ داشته باشد.
