چکیده

مصرف زیاد چربی خطر ابتلا به بیمار‌ی‌های مختلفی را افزایش می دهد، اما به‌دلیل نقش چندگانه چربی در فرآورده‌های غذایی، حذف یا کاهش آن منجر به ایجاد خصوصیات کیفی نامطلوب می‌گردد. بنابراین، در این تحقیق استفاده از ساختار امولسیون‌ژل سرد پایدارشده با استفاده از پیکرینگ های ایزوله پروتئین سویا (ISP) و کمپلکس ایزوله پروتئین سویا-صمغ دانه ریحان (ISP-BSG) به‌عنوان جایگزین چربی موردمطالعه قرارگرفت. ذرات پیکرینگ ISP-BSG به‌‎ترتیب با نسبت‌های مختلف جرمی ISP:BSG، 0:1، 1:1، 1:2 و 1:3 تهیه و به‌ترتیب 1S:0B ،1S:1B ،2S:1B و 3S:1B نام‌گذاری شدند. بررسی ویژگی های امولسیون ژل نشان داد که پوشش دهی سطح قطرات امولسیون توسط نانوذرات جامد S:B یک پوسته سفت و سخت را تشکیل می‌دهد. با افزودن کلسیم کلرید به امولسیون، شبکه‌های امولسیون‌ ژل از قطرات روغن تجمع‌یافته تشکیل‌ شدند که این ساختار در نمونه‌های 1S:0B و 2S:1B قابل‌مشاهده‌تر بود. همچنین، نوع و ساختار پیکرینگ به‌کار‌رفته بر مقدار حفظ روغن در امولسیون ژل اثرگذار بود. حضور BSG در نسبت مناسب (2S:1B) با ISP باعث ایجاد امولسیون ژل باثبات‌تر با استحکام مکانیکی (سختی و قوام) بالاتری شد. با توجه به پایداری و خصوصیات بافتی از بین نمونه‌های امولسیون ژل، دو فرمول 1S:0B و 2S:1B برای تولید خامه با چربی کاهش‌یافته (5، 10 و 15%) استفاده شد. استفاده از درصدهای بیشتر از 5 درصد جایگزینی با افزایش آب‌اندازی خامه همراه بود (05/0p <)، اما نوع امولسیون‌ ژل بر میزان آب‌اندازی تأثیر معنی‌داری نداشت. بیشترین میزان پذیرش کلی با جایگزینی امولسیون ژل 2S:1B با کاهش 5% چربی حاصل شد (05/0p>).
