چکیده

یکی از راه‌های تبدیل ضایعات مرغ به محصولی با ارزش افزاوده بالا، تولید سیلاژ بر پایه تخمیر است (بیوسیلاژ). این محصول به دلیل دارابودن ویژگی‌هایی مانند میزان پروتئین بالا و با کیفیت، باکتری‌های پروبیوتیک و قیمت پائین نسبت به پودر ماهی ارحجیت دارد و می‌تواند به‌عنوان جایگزین مناسبی برای آن مطرح باشد. هدف از مطالعه حاضر در مرحله اول تولید بیوسیلاژ از ضایعات مرغ و در مرحله بعد بررسی پروفیل اسیدهای آمینه و اسیدهای چرب محصول بود. مطابق یافته‌ها، در بیوسیلاژ تولیدشده، مجموع اسید‌های آمینه ضروری، 416/24، مجموع اسید‌های آمینه غیرضروری، 959/30 و مجموع اسیدهای آمینه ضروری و غیرضروری، 375/55 گرم در 100 گرم سوبسترا بوده است. همچنین مشخص شد که تمامی اسیدهای آمینه ضروری به غیر از تریپتوفان در بیوسیلاژ وجود دارند. بررسی پروفیل اسیدهای چرب بیوسیلاژ نشان داد که در این محصول مجموع اسید‌های چرب اشباع شده (SFA)، اسید‌های چرب تک‌زنجیره غیراشباع (MUFA) و اسید‌های چرب چندزنجیره غیراشباع (PUFA) به‌ترتیب 57/33، 17/41، 36/24 درصد می‌باشند. ضمن اینکه در محصول تولیدشده مجموع امگا3، 07/2 درصد، مجموع امگا6، 91/22 درصد و مجموع EPA وDHA ، 06/2 درصد است. از مقایسه پروفیل اسیدهای آمینه و اسیدهای چرب بیوسیلاژ تولیدشده در تحقیق حاضر و سایر محصولات مشابه (مانند پودر ماهی، روغن ضایعات ماهی و مرغ، پروتئین‌های آبکافتی حاصل از ضایعات) مشخص شد که بیوسیلاژ از ارزش غذایی کافی جهت استفاده در صنعت تغذیه آبزیان، دام و طیور برخوردار است.
