چکیده

در این تحقیق بستنی ماستی به عنوان یک فراورده سین بیوتیک تولید شد. فرآورده های غذایی که شامل هر دو بخش پروبیوتیکی و پری-بیوتیکی‌اند را سین بیوتیک یا غذاهای عملگرا می نامند. باکتری پروبیوتیکی لاکتوباسیلوس اسیدوفیلوس (La-5) به دو صورت آزاد و ریزپوشانی شده به بستنی ماستی اضافه گردید و قابلیت زنده مانی آن طی مدت 60 روز از نگه داری در °C18- مورد ارزیابی قرار گرفت. همچنین ترکیب پری-بیوتیکی فروکتوالیگوساکارید (FOS) در سطوح مختلف (0، 4/0و 8/0 درصد وزنی/وزنی) در تولید بستنی ماستی استفاده شد. تعداد سلول قابل زیست در حالت آزاد در مخلوط های بستنی ماستی، با 0، 4/0و 8/0 درصد فروکتوالیگوساکارید به ترتیب برابر cfu/ml109×8/3، cfu/ml109×5/3 و cfu/ml109×8/3 بود که بعد از 60 روز نگهداری این تعداد به cfu/ml107×2،cfu/ml107×2/2 و cfu/ml107×2/2 کاهش یافت در حالی که تعداد سلول قابل زیست در حالت ریزپوشانی شده از cfu/ml109×5/7، cfu/ml109×9/8 و cfu/ml109×8/9 به ترتیب به cfu/ml109×13/2، cfu/ml109×5/2 و cfu/ml109×9/2 کاهش یافته بود. به طور کلی نتایج نشان دادند که ریزپوشانی باکتری لاکتوباسیلوس اسیدوفیلوس توانسته به طور چشمگیری (05/0p
