چکیده

آکریل‌آمید از جمله ترکیبات نامطلوب است که طی برشته ‌کردن هسته خرما تولید می‌شود. با توجه به مضرات احتمالی آکریل‌آمید بر سلامت مصرف‌کنندگان، تعیین مقدار آن توسط HPLC-PDA در پودر و نوشیدنی موکا حاصل از پنج نوع واریته هسته خرما برشته شده در مقایسه با قهوه عربیکا برای اولین بار در این پژوهش مورد مطالعه قرار گرفت. روش آنالیز به جهت نوع حلال آلی (استونیتریل و متانول)، درصد حلال آلی (10، 5، 3 درصد حجمی/ حجمی) و سرعت جریان (0/1، 7/0، 5/0 میلی‌لیتر بر دقیقه) بهینه شد. همچنین پارامترهای رنگی و میزان ملانوئیدین انواع نوشیدنی هسته خرمای برشته در مقایسه با نوشیدنی قهوه عربیکا مورد بررسی قرار گرفتند. نتایج نشان داد که ترکیب آب/استونیتریل با نسبت 3:97 و سرعت جریان 7/0 میلی‌لیتر بر دقیقه، شرایط بهینه را جهت جداسازی پیک آکریل‌ آمید فراهم می‌آورد. محتوای آکریل‌آمید پودر هسته خرمای کبکاب، استعمران، زاهدی، شاهانی و مضافتی به‌ترتیب 15/4 ±99/360، 98/5± 07/301، 71/97± 4/292، 25/55± 3/167 و 37/2± 43/129 میکروگرم بر کیلوگرم به‌دست آمد که به‌طور معنی‌داری کمتر از قهوه عربیکا (44/17± 23/1825 میکروگرم بر کیلوگرم) بود. نوشیدنی موکای حاصل از هسته خرمای برشته نیز حاوی 68 -25 میکروگرم بر لیتر آکریل‌آمید بود. میزان ملانوئیدین در محدوده 81/11 -80/2 گرم در 100 گرم به‌دست آمد که بیشترین و کمترین مقدار به‌ترتیب در قهوه عربیکا و هسته خرمای استعمران گزارش شدند. همچنین بررسی پارامترهای رنگی نشان داد پارامترهایa* و b*تا حدی زیادی از الگوی ملانوئیدین پیروی می‌کنند، به‌طوری‌که با افزایش میزان a* و b*، میزان ملانوئیدین هم در نمونه‌ها افزایش یافت.
