چکیده

در پژوهش حاضر روش‌ جدیدی بر مبنای دو الگوریتم دودویی و RGB با هدف محاسبه میزان صدمات سطحی به‌طور خودکار و انجام درجه‌بندی کیفی ایجاد گردید. برای ارزیابی عملکرد الگوریتم‌های پیشنهادی، تاثیر  پوشش دهی با صمغ فارسی (0، 5/1 و 3 درصد) حاوی روغن شاهدانه (0، 075/0 و 15/0) بر میزان صدمات سطحی انگور در دوره نگهداری بررسی گردید. در الگوریتم دودویی پس از پیش‌پردازش تصاویر، تصاویر با سطح آستانه 2/0 به تصاویر دودویی تبدیل شدند. این در حالی است که در الگوریتم RGB، فرآیند با کمک مقایسه آماری بین مولفه‌های رنگی صورت پذیرفت و مشخص شد که از کانال‌های R، G و B با مقدار سطح آستانه 35/0، 45/0 و 3/0 می‌توان برای فرآیند تشخیص صدمات سطحی استفاده نمود. پس از حذف دم انگور و محاسبه مناطق معیوب با کمک مامنت تصویر، در نهایت میوه انگور به 4 درجه کیفی درجه‌بندی ه شد. نتایج نشان داد که هر دو الگوریتم دودویی و RGB توانستند فرآیند محاسبه میزان صدمات سطحی را با صحت بالایی (به ترتیب 33/97 و 08/98 درصد) انجام دهند و براساس نتایج ماتریکس درهم‌ریختگی فرآیند درجه‌بندی نیز با صحت بالاتر از 30/96 درصد انجام گرفت. همچنین مشخص شد که پوشش دهی با صمغ فارسی و روغن شاهدانه خصوصاً در سطوح پایین سبب کاهش بروز صدمات سطحی طی دوره نگهداری می‌گردد.
